Pavillon de Chavannes Cote de Brouilly Ambassades 2022The history of Pavillon de Chavannes is deeply intertwined with that of Château Thivin, another esteemed estate in Côte de Brouilly. In 1861, the Jambon-Chanrion family acquired the estate. The pivotal moment came after World War I, when Yvonne Chanrion married Claude Geoffray, heir to Château Thivin. Yvonne brought with her one-third of her family’s prized vineyards and later acquired another third from her sister. While Yvonne and Claude expanded Thivin’s holdings together, they never had children. Upon Yvonne’s passing in 1987, her family’s original vineyard inheritance returned to Paul Jambon of the Jambon-Chanrion family, along with half of the additional lands she and Claude had purchased. Terroir Sense Fronteres Brisat 2022Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.
Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.

Terroir Sense Fronteres Negre 2022Prizing finesse over concentration, Serbian-born vigneron Tatjana Peceric has a beautiful touch with Montsant’s high-grown Garnacha and Cariñena. Except for the skin-contact white Brisat, the wines are fermented as whole bunches in concrete, amphorae and stainless steel (no oak is used), and extraction is as gentle as possible. In the cellar, Peceric works with the infusion model—a buzzy term for sure, yet we should not forget that this kind of no-bells-and-whistles winemaking is scarce in this corner of Europe. In short, the grapes are gently crushed by foot and taken off their skins at between eight and 12 days to continue fermentation. “We don’t need to extract tannin,” says Peceric.
Another key to the style and quality here is that regulations allow for harvesting early for lower alcohol; minimum levels here are 12.5% for reds and 11.5% for whites (compared to 13.5% for reds and 13% for whites in the DOQ Priorat). This year’s Negre is a pure Garnacha, from mature vines sited around Capçanes. The 25-year-old (on average) bush vines sit at 350 metres on the mixed sandy clay soils (known locally as panal) with varied exposures.

Daniel Bouland Morgon Corcelette 2022The "regular" bottling of 2022 Corcelette from Monsieur Bouland is another lovely example of this very strong vintage. It is deep, bright and sappy, offering up a nose of red and black cherries, sweet cranberries, vinesmoke, gamebird, a dollop of fresh thyme and a very pretty base of soil tones. On the palate the wine is vibrant, full-bodied and deep at the core, with a fine foundation of soil, bright acids, moderate tannins and great focus and grip on the long, complex and beautifully balanced finish. Of all of Daniel's outstanding 2022s, this is certainly the first cuvée I would be reaching for to drink now, as it has a sense of wide open generosity that is not evident with most of his other, more structured wines from this vintage. Antarès is the main star of the constellation of Scorpio. One of the basic principles of biodynamics is to work in harmony with cosmic rhythms. Antarès is a selection of vines located on hillsides facing North, at the Western end of the Lirac appellation, at an altitude of 160m. The vines are 50 years old. The harvest is fully de-stemmed. Each variety is vinified separately using natural yeasts. The Grenache is aged in cement vats, the Mourvèdre in old French oak demi-muids for 12 months.

The cool vintage has its say. Refined, fragrant and elegant, but savoury and spicy, too. Distinct nebbiolo/nerello mascalese riffs, more the latter – an increasing theme at this address. Melbourne Gin Company Dry Gin 700mlFrank Moorhouse in his book Martini - a memoir states, "Every time it is served, the martini represents a journey towards an unattainably ideal drink". The idea of endlessly pursuing a perfection that does not exist is something well known to passionate winemakers. Having a winemaking background we thought we would delve into the mysteries of gin production. This was largely brought about by our fascination with martinis and all things gin.
The notion of the "unattainable ideal drink" led us into a series of trials and experiments and we have become fully immersed in the alchemy of batch distillation and the extraction of exotic and local botanicals. The MGC doffs its hat to London Dry Gin with the two major components being juniper berries and coriander seed. There are 11 botanicals in total (not including a lot of love) with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, which are all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark.Each botanical is distilled separately and then blended to our recipe - essentially a winemakers approach. We use a copper pot baine-marie alembic still. A still traditionally used for making perfume. This allows us to preserve the delicate nature of the botanicals we work with. The final component is the water used to break the gin back. We use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique "Melbourne Dry Gin" style.
The MGC is not chill filtered. We didn't want to take out the oils that contribute so much to the aromatics and mouth feel of the gin. So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this.
