Coffee Cocktail: Tonka Bean . Vanilla . Coffee . Orange

Iconic 80s model asked Soho Brasserie bartender, Dick Bradsell to make her a cocktail to “wake me up & f***k me up". A shot of espresso into a Black Russian recipe, created the ‘EspressoMartini’. Ours, tonka bean & fresh vanilla––think almond & baked goods–– gently supported by fragrant orange, & cold brew coffee––to wake your senses (not f**k them up).

To serve: Chill in the freezer for half an hour prior to serving. Pour over ice, garnish with an orange peel.

Made in stone lagars and aged in cement tanks along with some large old wooden vats, it's a very typical Dão blend of Touriga Nacional, Tinta Roriz (elsewhere, Tempranillo), Alfrocheiro and Jaen (aka Mencia).

A Descoberta means 'to be discovered' and the somewhat mystical label, a box tagged 1942 is a folkloric reference to an early version of a time capsule a box hidden in the stone walls of the house of Passarella containing a will to be opened 50 years hence and directing the riches of the box be re-distributed to the poor. The box was empty. Enrichment comes from the intangible not the material, it seems ...

A lovely wine supple, fleshy and spicy, with extra delicate tannin and oak. From lead-off, the cherry-chocolate fruit really shows the Dao granite, and is laden with wiry dark herbs. In the mouth, it's fleshy-meaty and mineral fresh - round with good movement and fruit-earth interplay. It has excellent presence in the mouth but is not reliant on weight for the show. Wonderfully composed, it sits and radiates, effortless in affect. Gorgeous delicate tannin is the frame, rimming the mouth and allowing the fruit and spicy acid to radiate delicately. A wonderful advertisement for varietal blends.

Estate grown field blend of Pinot Gris, Pinot Blanc, Gewürztraminer, Chardonnay Musqué, Riesling and Grüner Veltliner. Up to 7 days of skin contact before pressing. Natural co-ferment and maturation in a Pozvek foudré for 9 months on full lees. 100% malolactic fermentation. Bottled in January 2024 unfined and unfiltered.

Amber hue in the glass, this wine is complex and highly aromatic with scents of fresh apricot, musk and lychee. Peach, beeswax and subtle smoky notes. A creamy mid palate with a refreshing saline finish.

Classic Victorian wines don't get much better than this. If you are unfamiliar with Bowerbird Wines (very little wine is made) then you're in for a real treat here. Mouth-coating, textural, full-flavoured wines that offer bountiful pleasure right to the very last drop.

Kirilly Gordon is a quiet achiever. Her force is much greater than her stance. The humble Bowerbird Wines is the most underrated producer in the state. By day she's Denton in the Yarra and by night Bowerbird Wines soar. Kirilly's turning point in the wine industry was working at Bindi, where inspiration by Bill and Michael Dhillon came to the realisation that nurturing vines and grapes to create delicious quality wines is a pretty great way to live a full life. And I'm very glad about that.

Don't judge a book by its cover here. On first open it's steely with laser-like precision and just-ripe stone fruit, lemon curd and a delightful saline edge. As it opens in the glass we see it unfold. Even the entry-level white 2020 Candea Blanco, a regional blend of equal parts of Dona Blanca, Verdello and Treixadura fermented and kept with lees in stainless steel for one year, shows character, cleanliness, precision and freshness beyond the price point, and it transcends appellation and vintage and is offered with some time in bottle. It has only 12.5% alcohol and an expressive nose of herbs and flowers, and it is balanced, harmonious and elegant and finishes dry and long with a tasty and salty twist. A blend of vineyards in Clare Valley blending cabernet sauvignon, malbec, sangiovese and grenache. Clever. Their own ‘classico’. The new label reversed the colours on this one, more black on black with white font, and it looks sexy as.

Gorgeous wine. Supple, succulent, lush with dark fruit character, new leather, tobacco, mint and sage leaf characters with a fine, graphite minerally character through it all. It feels warm-hearted and kind of generous but keeps to the medium weight brief. It rolls with flavour, energy and tension of refined tannins through a long, mouth-watering finish. This cello is a disturbed, unhinged, raging hot mess of a drink. How, you ask? We infused zesty Australian blood orange peels with the dried husks of ancho chilli. It’s smokey, vibrant, zesty, bitter and sour.

It’s everything you ever wanted in a drink but were too self-concious and idiotic to ask for. So top it with Prosecco, top up your Negroni or drink it like a heathen - because this little number is music for your mouth. A symphony for your senses. A tango for your tastebuds. You get the drift....drink it.

Frank Moorhouse in his book Martini - a memoir states, "Every time it is served, the martini represents a journey towards an unattainably ideal drink". The idea of endlessly pursuing a perfection that does not exist is something well known to passionate winemakers. Having a winemaking background we thought we would delve into the mysteries of gin production. This was largely brought about by our fascination with martinis and all things gin.
The notion of the "unattainable ideal drink" led us into a series of trials and experiments and we have become fully immersed in the alchemy of batch distillation and the extraction of exotic and local botanicals. The MGC doffs its hat to London Dry Gin with the two major components being juniper berries and coriander seed. There are 11 botanicals in total (not including a lot of love) with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, which are all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark.

Each botanical is distilled separately and then blended to our recipe - essentially a winemakers approach. We use a copper pot baine-marie alembic still. A still traditionally used for making perfume. This allows us to preserve the delicate nature of the botanicals we work with. The final component is the water used to break the gin back. We use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique "Melbourne Dry Gin" style.

The MGC is not chill filtered. We didn't want to take out the oils that contribute so much to the aromatics and mouth feel of the gin. So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this. In a different context someone who is louche is of a shady character! Each bottle is numbered to reflect the small batches in which it is made. ANDREW MARKS, Distiller & Winemaker
