Described as a "cask-finished English grain spirit" because it hasn't spent enough time in barrel to be designated as whisky (there is a whisky in the works, due for release this year), this has just the faintest hint of pale golden colour and is bursting with ethereal aromas of sweet, freshly milled malted barley, a touch of honey, some lightly toasted linseed and sesame. It's sweet and fine on the tongue, with a deliciously seductive, gently oily texture. An intriguing and unique spirit. MAX ALLEN

The close spaced planting of this part of the Tiers vineyard imparts a slightly different flavour and textural feel to the Chardonnays from the old Tiers plantings. Intense aromas of tropical fruits, brioche and spices. The palate is ripe and textured although the chalky acid and light citrus edge hold the definition and line through to the long finish. Wow! This is something. I know many prefer the Tiers Chardonnay, but for the last two years I have leaned towards this 1.5m and I don't apologise for it. Elegance and purity seep through this wine's veins and I want it all.

Brian Croser describes 2024 as a model vintage and this release is tight and laser-like focused on opening. Concentrated stonefruit lands all the praise early on - the flavour intensity compared to the Tiers Chardonnay is telling and is due to a combination of close-planted vines and different clones. Grapefruit, slivers of almonds and fine drops of lemon juice draw out to a long finish. Baked cheesecake, vanilla pod, a touch of oyster shell and hints of brioche continue to peel back veneers of interest that seem to be brushed on ever so delicately. The precision is elite and the concentration supreme yet its presence is graceful and charming. Give it time to evolve and you'll be rewarded further more. Brilliant stuff. Pear, grapefruit, green banana, almond biscotti and spice, bread dough and some honey/floral perfume, with just a tiny bit of matchstick. It’s juicy and flavoursome, but tight in acidity, with a distinctly flinty texture, along with a creamy nougat richness, and a tight citrus finish of excellent length. Wonderful wine. Distilled in Battersea, south London, this is named after Ralph Dodd, an early nineteenth-century entrepreneur whose many schemes included the creation of the London Distillery Company. The venture failed - indeed Dodd was taken to court for his innovative notion to issue transferable shares - but his sprit lingered on. So when the brand new London Distillery Company started producing gin in 2013, it was called Dodd's. The bulk of the botanicals, including the honey, are distilled in a copper pot still, while the more delicate ones are cold distilled in a vacuum still. The two streams are then blended and married before bottling.

The nose is creamy, then a leafy shiso-like aroma emerges with fat fruits behind. In time there is subtle juniper, a menthol hit, some celery, and sweetness. The mouth feel is very silky, which distracts you initially from the high, fresh and brightly warm perfume. You're inside the pine forest eating ras el hanout baklava. DAVID BROOM, Gin: The Manual

From 40-plus year old vines.

Quite rich and full yet refreshment factor is retained. Quite a bit of rich stone fruit to sniff on, preserved lime, ginger, toasted coconut whiffs, a touch of toffee apple in there too. Bold flavours, big and round yet a core of crackling, grapefruity acidity spiked with brine. There’s character in spades here, lots of texture yet crisp edges, a flourish of toffee apple to finish. The botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of the copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. It contains 11 Botanicals including 3 local botanicals - Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed. SPRING BAY DISTILLING

For me this is an altogether gentle and delicate gin not that it doesn't have presence or flavour. More that it relies on its quality through craftmanship and quality ingredients. Juniper driven but highlighted with native bush botanicals that give a unique flavour and aromatic profile. I often find (Australia) native botanicals in gins overpower everything else but these are judiciously used and create a wonderful tasting gin. There is sweet oiliness on the finish that carries everything to gentle, clean and clear finish. A really well made and poised Aussie gin. MYLES,PWS

If you haven’t noticed the explosion in the craft gin scene in Australia then you must be living under a rock. As a Gin fanatic that has been pretty exciting for me in the last few years watching this category re-energised. Matt and Dave from Patient wolf are one of the newest kids on the block and they have done a fantastic job with their super locally crafted Patient Wolf gin. Yes -  I know its not wine!

With the help of their 230L Muller copper still, custom built in Germany they have made what is one of my favorite Aussie Gins to date - and there are a lot of them! Grapefruity-Citrus opens on the nose that breaks and revels a lovely savoury, earthy bent to this gin that I absolutely love. Orris root and peppry corriander compliment the underlying juniper drive. There is an almost forest floor like edge to the pithy citrus flecked core that just works brilliantly and sets it apart from so many Gins that are making their way on to the scene.

Perfect Gin and tonic gin with a slice of ruby grapefruit or try it as a Gin buck with lime, mint and dry ginger. Yum!

It has all the hallmarks of the site – Block 2, off Stevens Road, obviously, all Gingin clone, whole-bunch pressed to French oak, wild fermentation. And while there’s lees stirring throughout its nine months in barrel, there’s no mlf. It’s still a little frisky from youth as the acidity holds sway, yet in-between pink grapefruit and lime juice, zest and pith, too. There’s some depth and texture via lees input and the oak, yet all well placed and adding extra dimensions to this enjoyable wine. (95) JANE FAULKNER, Halliday Wine Companion

Some years I prefer Stevens, and in others, the Reserve. This year, Mr Stevens takes the tray.

Has a slight struck match character, along with lime, grapefruit, white peach, some fennel, light spice and almond nougat. Medium-bodied, lively acidity with plenty of fine flinty texture, green olive , a little parmesan rind, citrus, white peach, and again that lovely almond gloss to temper the wine. A cushioned width of aroma - this is very inviting. In the mouth a modest cushion too - but there's also some riper fruit depth and a silky texture - a super Bourgogne - with an almost sparkly, mineral finishing style - faintly tannic at the end. BILL NANSON

The 2021 Bourgogne Chardonnay "Les Grandes Coutures" is fragrant on the nose with Golden Delicious and light white cotton scents. The palate is medium-bodied with brisk acidity and a saline finish. NEAL MARTIN

An exceptional vintage for white wines. A lower pH, inherent freshness and phenolic bite, the artillery that delivers the impressive structural latticework necessary for further development. Really classy. Subdued aromas of cinnamon, sesame, quince, ginger and toasted hazelnut, with the barest hint of fruit. Better this way. The mid-weighted palate is pliant, nicely chewy and multilayered. The finish is exceptionally long, although I look forward to tasting again in another six or eight years after things unravel and meld. A cascade of yellow grapefruit juice, juiced green apples and lime sorbet. Elderflower and Acacia blossoms. A hint of green coconut and lemongrass. It's full of citrus zest with an almond milk creaminess and roast raw macadamia on the finish. Nutmeg, tahini and baked anzac biscuits. A harmony of high tones and deep base notes that presents a birds eye view of Hills chardonnay. There is real power and weight here but with plenty of fruit tension and enough malo buffering. From a vineyard planted in Gladysdale in '09. Matured in seasoned barriques. My pick of the '21 single-vineyard chardonnays, this has a complex bouquet of just-picked nectarines, white flowers and oyster shells. The palate is nicely balanced, with good weight and concentration. It's also chalky textured, saline and long. And, like Mac Forbes' single-vineyard wines, in particular, it's been built to last. The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. To do this he decided to take the road less travelled in distilling and instead of buying in bulk spirit to make his Gin

From eight different sites in the Eola Amity Hills, winemaker Daniel Estrin learned how to make Chardonnay from Litorrai's Ted Lemon. Paul Gerrie makes up the bulk of this wine with Eileen and Louise. 100% barrel fermented Estrin uses a tactile approach to the lees inclusion in this wine. At the entry-level, this wine is still over-vintaged, which builds tension in the wine. Notes of tarragon and chipped flint frame the smoky grilled lemon aromatics. Stony flint streaks introduce the palate, green mangoes, and grilled lemon peel. Delicious and a tad unbelievable as their entry-level bottling. CLIVE PURSEHOUSE, Decanter

The 2022 Chardonnay Eola-Amity Hills is a total pleasure on the nose, wafting up with notions of sweet spice, chamomile and ginger-tinged yellow apples. Round and supple, this possesses a core of juicy acidity that enlivens it's tart orchard fruits as a salty sensation forms toward the close. It tapers off with tension, cleansing and fresh, leaving a mineral twang and hints of sour citrus. Beautiful. ERIC GUIDO

A bright medium yellow hue, the 2022 Chardonnay Eola-Amity Hills is elegant, with a juicy, decadent feel to its notes of sweet oak spice, delicate, floral perfume, wet stone, and fresh white peach. Refreshing and mouthwatering, it’s medium-bodied and crisp, with good ripeness of acidity and a clean, elegant finish. It’s going to age well over the coming 6-8 years. JEB DUNNUCK

Winemaker Daniel Estrin calls this wine one of tension and generosity. A blend of fruit from Eileen, Louise and the Paul Gerrie vineyards, this wine spends 11 months in barrel and four to five months in stainless steel. Effusive florals lead the aromatic display with a bruised apple note and stony petrichor. The palate is honeyed and shows that tension as well, with Pacific-inspired salinity, chamomile and beeswax carrying the finish. DECANTER

What a pretty nose of white peaches, white lavender, hazelnuts and salted almonds. Full-bodied yet fresh, with sleek, salty layers. Excellent texture and complexity. JAMES SUCKLING

The 2021 Chardonnay Eola-Amity Hills is fresh and floral with notes of quince, yellow flowers, and honeycomb.
