Born in Turin, the city where the deep roots of Vermouth originated back in 1786. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.
Now, the question is do you want to just enjoy it on ice with a slice of lemon or do you want something with a little more oomph? Either way, you will love it and while we would prefer the former if we were sitting in some summer Italian sun we might be up for a white Negroni here in the middle of winter. Pierre Marie Chermette Beaujolais Les Griottes Beaujolais 2023 375mlThis mouthwatering crowd-pleaser is named after a grove of cherry trees that flank the vineyard. The fruit is drawn from 30- to 40-year-old Gamay vines, grown in dark granite soils around the Chermette homestead in Saint-Vérand, southern Beaujolais. In contrast to his age-worthy Crus from Moulin-à-Vent and Fleurie et al., Chermette aims to produce something light-to-medium-bodied, bright and cherry-fruited with reach-for-another-glass charm.
The winemaking has remained unchanged for decades, with traditional whole-bunch, semi-carbonic fermentation in concrete tanks followed by maturation in tank and old oak casks still the order of the day. The nose is so exuberant you could be tasting out of barrel, flush with easy-going, lip-smacking red fruit flecked by red floral notes. The palate tells the same story through waves of vibrant, tangy berries and cherrystone fruit. As always, it is a delicious, moreish wine and fabulous value.

Diego & Damiano Barale Dolcetto 2021Fruit entirely sourced from the Monforte d'Alba Cru of San Giovanni, which lends the wine a darker element and a touch of the more savoury, ironstone character. They are background notes to the brighter, fresher more gregarious elements that come to the fore. There is weaves of spice, rosehip tea. Primary, approachable and oh so drinkable. This is for consumption not contemplation. Mutual Promise Gamay 2024Given the small volume this is fully de-stem as opposed to the typical 50% de-stemmed and 50% whole cluster for carbonic. Wine was fermented with ambient yeast on skins for 2 weeks and pressed to 2 x 6 year old Bossuet 500 Lt Puncheons. No adds other than a small organic yeast hulls to aid fermentation and a small amount of So2 pre bottling.
Gentle spice, herbaceous alpine edge brings freshness, cranberry and bright cherry fruits. Red spectrum rather than blue black of the spiritual home of Gamay but delicious and dangerously drinkable none the less.

While Barolo and Barbaresco are the undeniable international stars of Piemonte, Dolcetto is it's heart and soul and a wine that is always on the Piemontese dining table and with examples like this, you can see why. Some dark red cherries and berry fruit are dusted with sweet cake spice and peppery goodness. It's a plush little package is knotted together wonderfully with a firm press of tannin, which sweeps across the palate to clean everything up at the back kept fresh by a jolt of bright acidity. Luciano Sandrone Dolcetto d'Alba 2023Sandrone’s Dolcetto is, without doubt, one of the very finest examples of the region. The consistent quality of this wine—its purity, silky texture, fine tannins and balance—can only come with perfectly ripe fruit from top sites. In this case, the sites are also high-altitude, which brings added freshness to the layers of fruit. From estate vineyards in Monforte d’Alba, Sandrone draws from Castelletto and Cascina Pe Mol. The latter sits at the top of the ridge leading from Monforte d’Alba to the hamlet of Perno and is among the highest vineyards of the region. In Novello, there are the Rocche di San Nicola vineyards and the whitish marls of Ravera—where the easterly exposure contributes perfume and aromatic complexity. Joining these sites now is fruit from Rivassi and Crosia in the commune of Barolo. There are typically 10 different parcels contributing to the blend, with any fruit not making the grade sold off in bulk. Each parcel is vinified separately before blending and the wines are aged in tank only.
The amount of care that goes into the growing of this wine is quite remarkable and it shows in the glass. There is some history here: when Luciano Sandrone was starting off, he was driven to produce greatness, yet he could only access a limited quantity of Barolo vines. He, therefore, channelled a great deal of his drive and energy into his Dolcetto (and Barbera). This helps explain the quality on offer.

It has a bright red calyx which adds colour and flavour along with 23 other botanicals including Australian natives – strawberry gum, Tasmanian pepperberry and salt bush. Its important bitterness comes from various roots, in particular gentian from Aubrac in the Centre of France. The wine base is from Heathcote grapes fermented as rosé, which is fortified with the unique blend of botanical tinctures . Dicey Bannockburn Pinot Noir 2021James is the grower, Matt the caretaker and they are the Dicey brothers. They are also neighbours with all the fruit for Dicey is sourced from the family's vineyards in the Bannockburn sub region of Central Otago. All sustainable and all about showing place.
Nice perfumed aromatics with soft violet, ripe dark cherries, anise and dark plum all interspersed with spicy cedar and delicate woodlands notes. That Otago rich dark cherry is on show but this doesn't feel too big or bulky like some others can. A touch of anise, that same dark plum all pile in there giving this plenty of push and depth. Its supple and soft with a lovely flow that carries the palate to a long finish that seems to unfold dark fruits, savoury spice, cedar and foresty notes layer by layer.
