This is a blend with grenache Blanc grown at the De Bortoli Melville's vineyard on the eastern edge of the Rutherglen region. The marsanne and roussanne are grown on the De Bortoli Shelley's Vineyard which is approximately 800m from the Melvilles Vineyard.
Picked in the cool of the morning and handled gently with non-oxidative winemaking techniques and cool temperatures at every stage. The wines were 100% fermented in stainless steel tanks to ensure they maintained all of their varietal freshness, crispness and great acidity.
The palate is fresh and crisp with a crunchy drinkability and textural mouth-filling palate. The blend has flavours of pears, apples, minerals and herbs, which follows onto the palate with a delicate richness and textured dry finish.

Thymiopoulos Xinomavro Young Vine 2022A blend of higher altitude parcels around the village of Fytia and the warmer, lower elevation parcels
adjacent to the village of Trilofos. Vines are young and non-irrigated at an altitude 200-500 metres on Schist, granite and limestone. Naoussa’s region warm continental climate with moderate rainfall throughout the year. Cooling winds from Vermio mountain are crucial for the quality of the grapes.
Grapes are hand-picked, 75% destemmed, macerated for 12-15 days and fermented in stainless steel tanks for 3 months and 8 months in concrete tanks.
Fresh strawberries, cherries, and raspberries, potentially with hints of wild herbs, spices, and even a touch of floral elements weaving themselves in too. The palate offers a juicy and refreshing experience, with bright red and black fruits dominating. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
