Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. This is 66% grenache, 31% cinsault and 3% counoise. Always the shapeshifter is Papillon.

Zind Humbrecht is one of the unquestioned kings of aromatic whites. His ceaseless drive to create the world's greatest examples of his varieties is nothing short of remarkable as are the resulting offerings. A devoted proponent of Biodynamics, a gifted presenter and communicator and a towering figure of modern wine, the first Frenchman to be awarded the MW (International Master of Wine) he has justifiably earned his reputation as one of the legends of modern wine.

The Tuckheim Range is the value tier and represents classic Alsatian whites from a regional blend of grapes as well as estate fruit. These vineyards are grown on the valley floor, where the glacial debris of rolled stones, granite and gneiss has settled over the aeons. Wine from these soils tends to have a lovely fruit profile underpinned with a stoney-mineral tension that screams 'drink me' and marks the wines with the typical mineral streak of Alsace.

Grenache (60%) Shiraz (25%), Mataro (10%) and Cinsault (5%). It’s in keeping with my little Grenache theme this week, except it’s from the Yarra Valley!

It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. 60/25/10/5% grenache/shiraz/mourvèdre/cinsault. The grenache spends 16 months in 1600L seasoned foudre, the rest matured in barriques (15% new for the shiraz). A wine that shows both the potential of these varieties and this blend at Mount Mary. Perfumed and spicy with red and black fruits and a little Mediterranean garrigue. Having had a relationship with the Bilbro family as importers of the Marietta wines some years ago we were delighted to find youngest son, Sam, was behind this new venture, Idlewild. In many ways the wines are the anitpathy of what so many believe Californian wines are supposed to be. Hunting out heritage stands of Italian and Rhone varietals (mostly in Mendocino County) Bilbro makes extremely interesting wines characterised by texture, savouriness and subtlety. Skin contact is a part of the wines as is a relatively non-interventionist approach; both indicative of the preferences of the younger brigade of Calfornia producers. PWS

The 2017 White The Bee Flora & Fauna, is a classy, polished wine to drink now and over the next few years. Green pear, mint, white flowers and light tropical overtones all grace this very pretty, expressive wine. The Muscat in particular adds an attractive aromatic flair. ANTONIO GALLONI

The 2022 Passorosso is spicy in the glass with an herbal thrust up front, giving way to ginger-tinged dried cherries and dusty sage. This is silky-smooth with ripe red and hints of blue fruit. Brisk acidity motivates the mouthfeel as the 2022 takes on a salty savoriness toward the close. It finishes with outstanding length and concentration, leaving a coating of fine tannins and a resonance of licorice on the close. Beguiling nose of red fruit and pistachios, with flowers and black pepper enhancing the aromas. The attack is a bit raw, with edgy tannins and crisp acidity. It's medium- to full-bodied and chewy, with a balanced finish. It needs time to soften the structure, but displays a tight, crunchy youthful style that will match well with food and has the potential for aging. This high-altitude vineyard delivers greatness. The colour tells a big part of the story: deep, dark amber brown. The scent is complex, sweet and pure with walnut, honeyed fruitcake, treacle, coffee bean and vanilla. Raspberry, cherry, light spice and smokiness, almond, floral prettiniess this vintage too. Bright red fruits, firm, brick dust tannin, very ‘mineral’ and stony, slip of orange peel and dried herb on the finish.
