Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

Laurent Perrier Brut NV…white fruits, lemon oil and warm biscuits, the NV Brut La Cuvée possesses a medium to full-bodied, round and supple palate with good depth at the core and a charming, fresh, ethereal finish. For this release, the percentage of Chardonnay in this cuvée has been slightly increased, making it a blend of 52% Chardonnay, 35% Pinot Noir and 13% Pinot Meunier. Brocard Pierre Champagne 'Tradition' NVBrocard Pierre's entry-level and only blended-grape expression of Champagne, Cuvée Tradition Brut, spends three years on the lees in bottle before release, which in our opinion, makes it one of the best quality-for-value wine of Champagne.
The Tradition is made of Pinot Noir (80%), Chardonnay (10%) and Pinot Blanc (10%) grapes from vineyards planted on clay-calcareous soil near Celles-sur-Ource. 2018 vintage reserve wine makes up the dominant base, while 30% comes from different réserve vintages. The juice was fermented in oak (15%) and stainless steel (85%) at controlled temperature. The wine then spent 4 months in stainless steel, and it was aged on lees for 2.5 years. It has 6g/l of dosage.
A flattering nose dominated by the Pinot Noir. Good harmony in the mouth, strength associated with freshness but not heavy accompanied by a slightly mentholated finish. Ripe citrus. Unctuous mousse. Chalky, mineral and saline and mouth coating. Generous autolitic notes.
