Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. Brash Higgins CINS Cinsault 2022From the neighbouring Lennon Vineyard, this spent two weeks on skins in an open fermenter before pressing to ‘veteran’ French oak to mature for seven months. It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.

Cognac Tesseron Lot 53 XO PerfectionThis is a blend of Grande Champagne Cognac distilled in the 1950s. 'This comes from some of our best lots and some of our best blends. This is very much the origin of our range, and for some difference, only about 4% colombard' says Melanie Tesseron. Burnt umber colour. Warm, hearty, earthy, woody aromas with lifted spice, hints of caramel, pepper and high tones of fresh honeycomb and citrus rind.
