Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. Brash Higgins CINS Cinsault 2022From the neighbouring Lennon Vineyard, this spent two weeks on skins in an open fermenter before pressing to ‘veteran’ French oak to mature for seven months. A variety that delivers grace and vibrancy in warm conditions, this leans into those proclivities, and perhaps more so given the cooler year. Quealy 'Pobblebonk' 2024Quite possibly the most delicious Pobblebonk to date. Riesling, friulano, pinot grigio and ribolla gialla are the friends, each fermented wild in used French oak, on full solids and later blended. It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.

Gravner Ribolla Gialla 2015Tasting his 2015 Ribolla I think I understood a lot about his human journey as well. Because if there is one wine that he will consider perfect, this is it. To call it orange wine is to do it an injustice. Of course, it is a macerated white, for seven months in buried amphora. Sure, it matures seven years in large oak barrels. But it is above all a total wine, where everything is in its right place. The oxidative component that does not define it completely, but is only one component, as in great red wines.
