Delas Freres is based in the beautiful northern Rhone with a large holding of their own vineyards supplemented by long-term relationships with quality growers all over the rhone. How they manage to put so much goodness into a bottle at this price is an astonishing feat to say the least.
While this indulgent red reflects the north’s regional dominance of Shiraz over Grenache, it reflects the darker fruits and a spicy earthiness often found in the southern Rhone, where this wine hails from. Silky rather than heavy, it still feels concentrated with bright, bubbly raspberry fruits complimented by a little dollop of wild, blackberry fruit. A waft of violets and pastille fruit just add to its appeal.

This is pretty classic stuff in all the best ways. A touch of fresh strawberry, snappy red currants, white pepper, a touch of fairy-floss lift and oh-so-inviting sweetly floral nose. It follows with that same wild strawberry and red berry fruit all fleshy and bright with a rim of citrus peel and quartzy-like minerality edging. The name "TURIN VERMOUTH" takes inspiration from the historicity of the fine products produced from secret family recipes and the liqueur tradition of the Piedmont capital.The production comes exclusively from Piedmontese territory with the main raw material of Artemisia Absinthium grown or harvested in Piedmont, moreover, only sugar, grape must, caramelized sugar or honey can be used as a sweetener. Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name.
