Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720mlOka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Terroir Sense Fronteres Brisat 2022Brisat is a blend of 75% Garnacha Blanca and 25% Macabeu from 15- to 35-year-old vines around Capçanes, grown at between 300 and 350 metres on sandy clay soils locally known as panal. The fruit is harvested earlier than typical for the area—when flavours are ripe and acidity is still vibrant.
Brisat in Catalan refers to wine fermented on skins. Half the grapes were direct-pressed, and the other half macerated in their juice for five to seven days. If you tasted earlier releases of Brisat, we should note that these days Huber and Peceric are searching for more finesse and expression of place in this wine, and thus have toned back the ‘skinsyness’. The must fermented with indigenous yeasts before the wine rested on lees for six months in tank. It was bottled unfiltered.

Terroir Sense Fronteres Negre 2022Prizing finesse over concentration, Serbian-born vigneron Tatjana Peceric has a beautiful touch with Montsant’s high-grown Garnacha and Cariñena. Except for the skin-contact white Brisat, the wines are fermented as whole bunches in concrete, amphorae and stainless steel (no oak is used), and extraction is as gentle as possible. In the cellar, Peceric works with the infusion model—a buzzy term for sure, yet we should not forget that this kind of no-bells-and-whistles winemaking is scarce in this corner of Europe. In short, the grapes are gently crushed by foot and taken off their skins at between eight and 12 days to continue fermentation. “We don’t need to extract tannin,” says Peceric.
Another key to the style and quality here is that regulations allow for harvesting early for lower alcohol; minimum levels here are 12.5% for reds and 11.5% for whites (compared to 13.5% for reds and 13% for whites in the DOQ Priorat). This year’s Negre is a pure Garnacha, from mature vines sited around Capçanes. The 25-year-old (on average) bush vines sit at 350 metres on the mixed sandy clay soils (known locally as panal) with varied exposures.

Antarès is the main star of the constellation of Scorpio. One of the basic principles of biodynamics is to work in harmony with cosmic rhythms. Dewazakura Dewa Sansan Junmai Ginjo Sake 720mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. From the Onkaparinga Hills, a parcel of dry-grown bush vines, fermented as whole clusters and aged in a single, larger-format cask. This parcel was planted in the early 1970s and it has a sappy feel (whole clusters) and bright, very pure raspberries and some leafy elements on offer, as well as blueberries. The palate has quite smooth and ripe tannins, holds a fresh edge (low pH) and delivers a similar combination of red and blue fruits as seen on the nose. A little, chewy stone pop at the finish. MMAD Grenache 2022This is ballistically good. I doubt that I’ll taste anything much better from these shores over the next 12 months. The first thing you notice is the plushness, which is always welcome, but it’s the finish that takes things to eleven. Wow, really, this wine has a show-stopping finish on it. It’s blessed with red and blue berry flavours, cedarwood, roasted spice and earth, but itemising the flavours of this wine kind of misses the point. It’s like focussing on the colour of a tidal wave. The complete and utter command of the final flourish of flavour and tannin here feels, as you swallow, like a high water mark. I’m sold, totally sold, on this wine. From the new estate vineyard for Pannell, an old but recently viticulturally retooled site in Blewitt Springs. It will be fascinating to watch this bottling over the subsequent years as Stephen and co get the full benefit of enhanced farming reflected in bottle, but this is a very bright start. There's presently a touch more flex and breadth than the other single site grenache bottlings, but still with the tenson of the year. Wild raspberry, redcurrant jelly, bitter red aperitivo, tamarind and sour cherry. Tannins are fine, insistent and sandy, acidity a driving force. This is a stellar debut. (96) MARCUS ELLIS
