The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. Sauveroy 'Cuvée Ose Iris' Anjou Rouge 2020This family estate has been nestled in the heights of the Layon Valley in Saint-Lambert-du-Lattay in Anjou for three generations. The vineyard extends over a beautiful plot of 31 hectares of which 26 hectares are under vine and 5 hectares are in "wild" areas in anticipation of a future plantation or simply to preserve biodiversity. Quentin, Véronique and Pascal Cailleau, the last generations at the head of the domain, manage their vines according to the principles of organic farming, with rigor and precision.
We absolutely loved this at a recent tasting so just had to put it into this pack. Don't be surprised if you hear us talking about it some more because this is what cab franc should be. Soft and supple but countered with some fine powdery tanning and a whicked little crunch to the fruit. It explodes in the glass with raspberry, cherry, redcurrant and balckberry thast just swirls around and around. So vibrant with awesome balance. Domaine La Soumade Rasteau 2020Andre Romero founded Domaine Soumade in 1979 and is now considered perhaps the finest producer in the region. The village of Rasteau was elevated to AOC status alongside Chateauneuf du Pape and Gigondas and 2010, and we find that while the styles are similar there is more freshness in Rasteau than the other two. The Cuvee Prestige is a gorgeous wine, made from a classic blend of Grenache (70%), Syrah (20%) and Mourvedre (10%) made with an extensive fermentation and maceration of nearly four weeks to extract colour, favour and tannins, following very gentle maturation in a combination of old 4,000L oak vats (foudres) and concrete tanks. Domaine la Roubine La Grange de Briguieres Sablet 2022The personality of the maker - generous and jovial - is on full display via black and red fruits while blue florals and the liquorice that jumps out of the glass, give the wine it's aromatic swagger. On the palate too, it's direct; big on flavour and impact with that same red and black fruited attack laying the groundwork for a more complex array of mineral, hung meat, liquorice, dried herbs and smoke. Pretty much like falling head first into a hypothetical vat the Southern Rhone itself. Medium to full bodied with plenty of structure to cope with anything from the bbq to the one-pot wonder.

Rocher des Violettes Cot Touraine 2020This comes from a wide ranging age of vines between 5 - 129 years old on silty clay over limestone from the sites; Bel-Air, La Rochère, Le Grand Poirier and Les Borderies.
Made from Cot, the local name for malbec there's an ebullient lift to the nose of maraschino cherries, violets and fragrant blackberries with hints of black pepper thanks to the inclusion of whole bunches. A framework of tannins envelopes the intense core of dark berries with an undertow of savoury minerality to support.
