The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. Paolo Scavino Vino da Tavolo Rosso 2021Paolo Scavino owns 29 hectares entirely in the Barolo area and works on 20 Barolo historical crus located in Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d'Alba, Verduno and Roddi. The Scavino family distinguishes itself from the beginning by their scrupulous care of the vineyards and passion for terroir. Their core beliefs is the supremacy of the viticulture above the oenology therefore the focus is the care of the vines in order to grow ripe and healthy grapes. In winemaking minimal and equal intervention are sought, to preserve natural diversities, terroir.
Second year in a row for this wine (new vintage) so you know it must be good. While they may be well know for their excellent Barolo this wine is always one that sucks us in when we try it. Nebbiolo from younger vines and those that don't quite make the cut go into this delicious Piemontese red. A melange of read and black fruits with roasted earthy notes from the neb component striking a beautiful counterpoint of savouryness to the sweet fruits. So plush and mellow but with a tingling spine of energy and fresh cut acidity. A wonderfull combo of vibrancy and velvety fruit. Love this wine!

Babo Langhe Nebbiolo 2021Red fruits, and really quite dusty and peppery, along with some floral notes. It’s medium-bodied, tannin has a gentle chew to it, and a whole lot of dusty spice cupboard character, but it’s fresh ,with some cranberry crunch to acidity, and a dry and gently ferrous finish of solid length. The latest wine from Justin Bubb and the Babo team is a Langhe Nebbiolo, sourced from vineyards near the famed town of Castiglione Falletto. The sites mainly face southwest between 300 and 400 metres above sea level. The 2021 vintage came with challenges: spring frosts affected yields, and the summer months were warm, but the fruit quality at the end of the season was fantastic. The fruit was handpicked, destemmed and macerated for about a week with twice-daily pumpovers. Sauveroy 'Cuvée Ose Iris' Anjou Rouge 2020This family estate has been nestled in the heights of the Layon Valley in Saint-Lambert-du-Lattay in Anjou for three generations. We absolutely loved this at a recent tasting so just had to put it into this pack. Don't be surprised if you hear us talking about it some more because this is what cab franc should be. Soft and supple but countered with some fine powdery tanning and a whicked little crunch to the fruit. It explodes in the glass with raspberry, cherry, redcurrant and balckberry thast just swirls around and around. So vibrant with awesome balance. Rocher des Violettes Cot Touraine 2020This comes from a wide ranging age of vines between 5 - 129 years old on silty clay over limestone from the sites; Bel-Air, La Rochère, Le Grand Poirier and Les Borderies.
Made from Cot, the local name for malbec there's an ebullient lift to the nose of maraschino cherries, violets and fragrant blackberries with hints of black pepper thanks to the inclusion of whole bunches. A framework of tannins envelopes the intense core of dark berries with an undertow of savoury minerality to support. Massolino Langhe Nebbiolo 2022Screwcap. Three sources here. First, Massolino’s younger vines in Serralunga—in other words, declassified Barolo fruit. Then, Monforte’s Cascina I Maschi (Massolino credits this cool, chalky site with giving the wine lifted perfume and freshness). And finally, a parcel in Alba on lighter, sandy-clay soils, bringing generosity of fruit. The blend is roughly one-third from each of these areas, and there’s little doubt the sum of these parts brings even more finesse and early-drinking appeal to what has always been an outstanding Langhe Nebbiolo.
The 2022 is another gorgeous release from this label. It is a pure-fruited, pretty wine (suggesting strawberry, cherry, violet, anise) with ripe, chalky tannins and a terrific, perfumed finish spiked with graphite-like minerality. Following very gentle extraction, it aged in large Slavonian oak casks for 15 months, as opposed to 24-plus months for the Barolo wine. To call this a bargain is to grossly understate the case!
