Walsh & Sons Felix Shiraz 2021Grown in the sandy, clay soils of our Osmington family vineyard. Planted in 1995 with rows running north to south on a slight northeast facing slope. The vineyard is certified biodynamic. We treat it like a veg patch, heavy compost in autumn and sheep snapping the odd wire as they browse in winter.
20% handpicked early April before machine harvesting 2-days later. The whole bunches added to vat, the machine component going on top, no crushing or destemming. Wild fermented on skins, until dry. Pressed to a mix of new & old French barrels. A single racking after the Spring equinox otherwise it sits on full lees until January, topping every two weeks. Spontaneous malolactic fermentation from Autumn to Spring giving a natural CO2 cover during maturation. The wine remains undisturbed with minimal sulphur added prior to bottling in February. High-quality, smaller corks provide a more drinkable style through bottle aging. A very good vintage for Chardonnay in Margaret River.This is a fine-boned and fairly lean expression of MR Chardonnay, and I’m trying to decide if it’s just a bit too lean, or just a cooler style. It’s floral, white fruit and grapefruit, a firm kiss of ginger oak, which subsides with some airing, and slight struck match. It has some sour yoghourt in with white fruit and citrus, almond too, a pleasing chalk dust texture, and a bright finish of good length and tangy citrus zip. Nice wine. Lively. Fermented over the course of three weeks – for a riesling – in a 10 degree room and then left to ferment (or to stop fermenting, naturally) over the course of another week, in a 1 degree room. Finished wine has 10 grams/litre residual.There’s decent intensity the the fruit flavour here but it’s mostly defined by its soft, fluid nature, and by the savoury-like notes about the edges. Yes there’s some fruit sweetness here too and it plays its role but it’s a long way from being a dominant factor, other than of course than contributing to the wine’s softness. Delamere Sparkling Cuvee NVDelamere Vineyards were planted in 1982 in the Pipers River region in northeast Tasmania making it one of the oldest plantings not only in the region but in Tasmania. They have 6.5ha under vine and its age makes it a rare resource in Tasmania. The ironstone rich soils are perfectly suited to the cultivars of pinot noir and chardonnay, and was established in the traditional French design used in Burgundy and Champagne.
The low yield per vine and the reflective heat from the ground produces wines with superior depth of flavour and ripe well-developed tannins. Vine age and subsequent natural balance are key factors in the consistent production of wines with great structure and harmony.
