Santadi Onilos Cannonau 2022Cantina Santadi, form Sardinia’s southwestern coastal region known as Sulcis, was founded in 1960 as a cooperative of local growers. Under the guidance of Antonello Pilloni, Santadi has become one of Sardinia’s, and Italy’s, finest wineries, with more than 200 growers farming 600 hectares. In the early 1980’s, Antonello called on the late Giacomo Tachis to consult for Santadi. Creator of Sassicaia, Tachis would go on to become the man behind Italian wine’s worldwide renaissance. The Sulcis peninsula is, geologically, Sardinia's most ancient area, rich in archaeological sites, and offers an astonishing palette of variations and contrasts, with coastal sand dunes, gentle hills and inlets, narrow strips of flatland and inland mountains, rugged cliffs overhanging the sea interspersed with silky-smooth white beaches, pine trees, junipers and vineyards. In these sandy soils, pre-phylloxera vines continue to survive and thrive.
This is a stunning little number, ruby-red wine from the island of Sardinia, Italy. Made from 100% Cannonau grapes, it offers up a vibrant and subtely complex bouquet of ripe red fruits, spices and fresh leather. This bucks the trend of many cannonau wines from the island who often come across as soupy and overblown but here we have a wonderfuly light on its feet version with tons of crunchy freshness and pure fruits. It really is a bit of fresh air and we would love to see more of these wines go this way embracing levity and energy over gaudy fruit profiles. It's nutty and has notes of peach skin, aromatic, and it's velvety and warm, with notes of oak, spicy and smoky, with balance and elegance. This is a recent bottling, but there are no clues about it on the labels; but they mention En Rama, bottled unfiltered. Domaine Joly Cotes du Jura Poulsard 2022Managed by Cédric Joly, Domaine Joly encompasses approximately 6.5 hectares and offers a comprehensive range of Jura wines. The reds are vinified from fully destemmed grapes and fermented with indigenous yeasts, with about 15 days of skin contact. They age for a relatively short period of six to seven months, leading to an early release. Joly explains, "When I took over from my father 30 years ago, he instilled in me the idea that it's easier to correct a wine with a little chaptalization rather than playing around with artificial acidities. That's why I'm usually the first to harvest grapes compared to neighboring vineyards.”

Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
