The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. Voyager Estate Chenin Blanc 2024Fruit for the Chenin Blanc comes from three organically farmed estate blocks on the Voyager Estate property. Voyager has some of the oldest Chenin Blanc in the Margaret River region, with some of the vines planted as far back as 1978. The vineyard soils are mostly gravelly loams with stony clay subsoils, providing excellent drainage and good moisture-holding capacity. The resulting fruit has exceptional balance.
One of the better chenin blancs from Voyager Estate to date as it has flavour and richness but stays neatly in the dry spectrum. Poached pears and quince, lemon balm and lime curd with an intriguing waft of lanolin and the tug of phenolics add to the palate's shape. There's refreshment throughout but also depth. Lovely. MMAD Chenin Blanc 2023 375mlI cut my teeth on chenin blanc, McLaren Vale chenin at that, but the wines I was drinking in the late 1980s didn’t bear a great deal of resemblance to this majestic offering.
I’m a bit blown away. Instead of being the steak knives in the range this vies for top spot. It has flavour and texture but it’s the way brine and smoky, reductive characters play in with the fruit that really gets you in. This is a sophisticated white wine. It’s all river stones and nashi pear, apple and cedar, though it’s defined by its smoke/salt/stone characters. Santadi Onilos Cannonau 2022Cantina Santadi, form Sardinia’s southwestern coastal region known as Sulcis, was founded in 1960 as a cooperative of local growers. Under the guidance of Antonello Pilloni, Santadi has become one of Sardinia’s, and Italy’s, finest wineries, with more than 200 growers farming 600 hectares. In the early 1980’s, Antonello called on the late Giacomo Tachis to consult for Santadi. Creator of Sassicaia, Tachis would go on to become the man behind Italian wine’s worldwide renaissance. The Sulcis peninsula is, geologically, Sardinia's most ancient area, rich in archaeological sites, and offers an astonishing palette of variations and contrasts, with coastal sand dunes, gentle hills and inlets, narrow strips of flatland and inland mountains, rugged cliffs overhanging the sea interspersed with silky-smooth white beaches, pine trees, junipers and vineyards. In these sandy soils, pre-phylloxera vines continue to survive and thrive.
This is a stunning little number, ruby-red wine from the island of Sardinia, Italy. Made from 100% Cannonau grapes, it offers up a vibrant and subtely complex bouquet of ripe red fruits, spices and fresh leather. This bucks the trend of many cannonau wines from the island who often come across as soupy and overblown but here we have a wonderfuly light on its feet version with tons of crunchy freshness and pure fruits. It really is a bit of fresh air and we would love to see more of these wines go this way embracing levity and energy over gaudy fruit profiles. Ah Tuffo! This wine seems to never fail us. Not only is it a wonderful example of classic Vouvray it always delivers that little x-factor and bit of pizzaz we like. That lovely clay/waxed citrus and quince fruit comes at you straight off-the-bat with that slaty chalky thin that chenin does in the Loire so well. Some apple and pear drop generosity on the palate is cut by crunchy acidity and a little hit of phenolic grip that stick all those beautiful flavours to your mouth. Damien Pinon Vouvray Brut NVThird generation vignerons, the Pinons have 25 hectares in Vernou-sur-Brenne. 50% of their production is sparkling and 50% still wine with nothing sold off to the négoce.
We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.
Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.

It was vinified in used oak barrels of 228 litres, with an élevage lasting twelve months. Aromatically this is rich in powdered chalk, with layers of white peach and a fragrant, lifted, minty freshness. The palate matches this style, in a gently composed structure, polished and fresh, with the same minty, white peach substance. It is framed by firm acidity, which I find typifies the vintage.
