Eric Bordelet Sydre Brut Tendre Apple Cider NVThe biodynamic orchards are comprised of trees upto 50+ years old containing 40-50 varieties of heirloom apples. The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Trinity Hill's 2018 The Gimblett is a 50-50 blend of Cabernet Franc and Cabernet Sauvignon, aged in 100% new French oak for 21 months. Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. Mount Horrocks Cabernet Sauvignon 2022From biodynamically (certified) grown vines. This switches things up for the general character of Clare Valley cabernet wines, lighter, brighter, frisky almost, lots of greenery and peppery spice, almost minty elements in dark chocolate, cassis, boysenberry characters to taste. There's a crispness to the wine, bright and lively, the herbaceous notes leading the way but not totally defining the wine. Fine, light tannins hold court. The perfume matches the flavours, a big fog of freshness, herbal detail and almost a sense of 'purple' if synesthesia is your thing. All up, a wine of vigour and good energy, though you'll be wanting cabernet on the more vibrant side overall. Prieure Lichine 2018 375mlThe 2018 Prieuré-Lichine is gorgeous. Bright and racy in the glass, the 2018 impresses with its magnificent purity of fruit. In 2018, Prieuré-Lichine has terrific energy and cut. It is perhaps a bit less creamy than the 2016, but also impeccable in its balance. Part of that is driven by the higher percentage of Cabernet Sauvignon in the blend in 2018. Rose petal, lavender, mint and spice add nuance to a core of red/purplish fruit. Tasted two times. The 2018 Château Prieuré-Lichine is an attractive, elegant Margaux offering classic, pretty red and black fruits, cedary spice, and dried flowers aromas and flavors. Forest Hill Block 5 Cabernet Sauvignon 2022It feels like this pocket of Mount Barker does well with this variety. Very well. Bold scents of cassis, lavender, bay leaf and sea spray with well-judged clove and cinnamon spice. Refreshing and succulent to taste, spot-on medium weight, though the levity and vitality make it feel prettier than that. Dark fruit flavours but lots of herb and spice too, tannins in tow are ultrafine and, again, mineral-charged, all pulverised stone and talc. Chateau Lilian Ladouys 2018The 2018 Lilian Ladouys is such a gorgeous wine. Black cherry, gravel, scorched earth, leather and dark spice give the 2018 a brooding aromatic profile that suggests a potent wine. On the palate, though, the Lilian Ladouys is quite a bit more restrained than the bouquet indicates, in a good way. The 2018 is wonderfully deep and fleshy, but not at all heavy, with a natural sense of radiance that complements the more rustic leanings of Saint-Estèphe. The 2019 Château Prieure-Lichine is impressive, showing lots of spiced red and black fruits, sandalwood, and dried flower notes as well as medium to full-bodied richness on the palate.
