Harvest Moon Pinot Grigio 2023Callie has grown up with wine in the blood. It was family holidays to Chianti in Italy, and tasting’s at Louis Roederer in France that sparked a serious passion in Callie from a very young age. Having studied psychology and criminology at Melbourne University, and qualifying as a chef it was the lure of wine and more so vineyards that she just couldn’t resist. She’s now studying wine making at Charles Sturt University, and has already worked at some A-list wineries, including De Bortoli in the Yarra Valley, Littorai Wines in California and Fattoria Zerbina in Romagna.
This is a smashing combo of classic Alsace and northern Italian style grigio. Bursting with Apple, pear, some honeysuckle spice, and a hint minerally goodness too that you don't often find at this level. It's the lighter side of mid-wright packed with crispy fruit and plenty of it the focus to a fine, citrus-driven fresh with lots of crunch and energy. The quintessential drink don't think wine.

Composed of at least 50% of wines produced in Piedmont and flavored, even if not exclusively, with herbs grown or harvested in Piedmont. It's pretty special stuff and an obvious choice for Stage 3.

This is a sample drawn before bottling. A vibrant hue in the glass, and a beautifully pure and eager nose of black cherry, blackcurrant and damson fruits. Tasted alongside the 2020 and while they’re obviously similar, there’s more acidity and leafy perfume in the 2021. Blackcurrant, raspberry and leaf, tobacco, and spicy perfume, pencil/cedar oak. Medium-bodied, tannin sits so nicely within the wine, fresh and long, with classic fragrance in with that. So ‘minerally’ and cool. Very long. Trinity Hill's 2018 The Gimblett is a 50-50 blend of Cabernet Franc and Cabernet Sauvignon, aged in 100% new French oak for 21 months. The floral overtones of the Franc really show up on the nose, while the palate is more about cassis and a streamlined, concentrated, linear presentation. Medium to full-bodied, it adds softly dusty tannins on the finish, along with hints of mocha and vanilla. Approachable now, it should still be going strong in a decade's time.
