Santadi Onilos Cannonau 2022Cantina Santadi, form Sardinia’s southwestern coastal region known as Sulcis, was founded in 1960 as a cooperative of local growers. Under the guidance of Antonello Pilloni, Santadi has become one of Sardinia’s, and Italy’s, finest wineries, with more than 200 growers farming 600 hectares. In the early 1980’s, Antonello called on the late Giacomo Tachis to consult for Santadi. Creator of Sassicaia, Tachis would go on to become the man behind Italian wine’s worldwide renaissance. The Sulcis peninsula is, geologically, Sardinia's most ancient area, rich in archaeological sites, and offers an astonishing palette of variations and contrasts, with coastal sand dunes, gentle hills and inlets, narrow strips of flatland and inland mountains, rugged cliffs overhanging the sea interspersed with silky-smooth white beaches, pine trees, junipers and vineyards. In these sandy soils, pre-phylloxera vines continue to survive and thrive.
This is a stunning little number, ruby-red wine from the island of Sardinia, Italy. Made from 100% Cannonau grapes, it offers up a vibrant and subtely complex bouquet of ripe red fruits, spices and fresh leather. This bucks the trend of many cannonau wines from the island who often come across as soupy and overblown but here we have a wonderfuly light on its feet version with tons of crunchy freshness and pure fruits. It really is a bit of fresh air and we would love to see more of these wines go this way embracing levity and energy over gaudy fruit profiles. It's nutty and has notes of peach skin, aromatic, and it's velvety and warm, with notes of oak, spicy and smoky, with balance and elegance. This is a recent bottling, but there are no clues about it on the labels; but they mention En Rama, bottled unfiltered. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. In addition to this month's Italian Mixed dozen we thought we would like to offer a Negroni pack featuring this incredible product. We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Their philosophy is to maintain tradition through the production while sourcing aromats and herbs from all over the world and based on the local wines of the Piemonte's hills. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.
