This is a recent bottling, but there are no clues about it on the labels; but they mention En Rama, bottled unfiltered. Mengoba Godello sobre lias 2021This wine fermented with wild yeast in wooden foudre and was raised for 10 months on fine lees in two 4,000-litre oval wooden vats.
The aging is longer and less reductive than for its younger sibling, which only seems to enhance the sense of smoky minerality—a reflection of the slate and calcareous soil in which the vines grow. It is a complex and stimulating mountain white that is, by turns, grapefruity, fleshy, powdery and savoury. The finish throws up deep, earthy mineral notes and perfumed, mouth-watering length. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.
