From Domaine Jean-Luc Mouillard, the Bas de la Chaux Chardonnay comes from a single steep, limestone-rich parcel that is largely worked by hand. Fermentation begins in tank, with élevage continuing in older oak, and both primary and malolactic fermentations occur naturally. The wines lean toward clarity and classic Jura minerality rather than overt winemaking influence.
This is a clean, mineral Chardonnay with a nice line of acidity. Citrus and apple sit over a lightly textured palate, with a subtle roundness from barrel ageing. Fresh, balanced and quietly complex.
