Since Faively's purchase of Domaine Billaud-Simon in 2014, régisseur Olivier Bailly has been refining a subtly brighter, more tensile style, with somewhat earlier harvests and a decreased percentage of new oak for certain cuvées. A mix of fresh citrus (lemon, lime), stone fruits (peach), apple, and mineral elements like oyster shell and wet stone. Ripe yellow fruits, a hint of spice, and a stony or chalky quality are prominent. Nice energy and a balanced, dry finish with both power and freshness.
