Fleurie is widely regarded as one of Beaujolais' finest crus, producing wines prized for their perfume, depth and structure. Stéphane Aviron sources his Fleurie from the family-owned La Madone vineyard, situated on the steep western slopes of the appellation. Planted on classic granite soils and requiring entirely manual cultivation and harvest, these old vines—ranging from 55 to 90 years of age—deliver fruit of remarkable concentration and character.

The grapes are hand-harvested and carefully sorted before undergoing whole-bunch fermentation and a week-long maceration in temperature-controlled stainless steel tanks. The wine is then matured for twelve months in large, neutral oak foudres of around 50 hectolitres, allowing the purity and elegance of the fruit to take centre stage while adding texture and complexity to the finished wine.
