    Perched on the slopes of the extinct Mont Brouilly volcano, Côte de Brouilly is one of Beaujolais' most distinctive crus, defined by its blue-stone diorite soils and elevated sites. Stéphane Aviron draws this wine from two separate parcels on the mountain. The first, accounting for around three-quarters of the blend, lies on poor southwest-facing soils and is planted to vines more than 60 years old, providing the wine with depth and structure. The second parcel, with south-facing exposure and vines averaging around 45 years of age, brings brightness and generous fruit to the blend.

    Each parcel is vinified and matured separately before the final assemblage. As is traditional in Beaujolais, whole bunches are used and undergo a week-long maceration prior to pressing. The wine is then matured in a combination of stainless steel and old neutral foudres, some more than four decades old, preserving freshness while allowing the character of the fruit and terroir to shine through.
