Shuck Yeah! Chablis & Oysters 2024

The Touche Mitaine parcel features Chenin Blanc vines aged 35 years, planted on clay and flint soils. It was vinified in used oak barrels of 228 litres, with an élevage lasting twelve months. Aromatically this is rich in powdered chalk, with layers of white peach and a fragrant, lifted, minty freshness. The palate matches this style, in a gently composed structure, polished and fresh, with the same minty, white peach substance. It is framed by firm acidity, which I find typifies the vintage. The alcohol is 12.8% CHRIS KISSACK

Pure and alluring, with apple and citrus cloaked in spices and salty brine. Remains racy through the smoky, vivid finish, thanks to mouthwatering acidity. Drink now through 2028. WINE SPECTATOR

The 2021 Chablis Montée de Tonnerre 1er Cru comes from 2.2-hectares split over three climats with different orientations including the domaine's oldest vines planted back in 1936. This has quite an aromatic bouquet with limestone, oyster shell and yellow plum aromas that blossom in the glass. The palate is well balanced with fine acidity, harmonious with commendable weight matched with a countervailing saline element. Bright and sparky, enjoy this delicious Chablis over the next 15 years. The quite strict 2023 Chablis Village offers Granny Smith and orange rind on the nose, with light mango scents emerging with aeration. The palate is taut and fresh with a slight creaminess in texture towards the finish. Drink over 4-5 years. NEAL MARTIN, Vinous

The grapes come from eight different areas, which are mainly located on the left bank of the Serein river, Pargues in the Forêts valley, and Vaillons. They are blended with the parcel located just below the Montée de Tonnerre, to create this authentic Chablis. No added yeast, long fermentation using indigenous yeasts, in temperature-controlled vats. Spontaneous malolactic fermentation.

Matured for 6 to 10 months. In stainless steel tanks, with the least possible handling. Long moderately cold stabilisation. Fining using bentonite if necessary. The wine is gently filtered once before bottling
