The NV Palma Caberrubia Saca IX, the oldest of this bottling, now bottled once per year, each year older, more polished and with more finesse. This is a textbook Fino (without the name mentioned on the label), with the sapid, intense and stony character of the wines from the past. It has pungent aromas and flavors that combine cheese rind, esparto grass, spices and chalk, and it finishes bone dry and with an astringent sensation. It was bottled in May 2025. Since August 2025, the Jerez appellation allows for biological wines that are not fortified, and they lowered the minimum alcohol to 14%; so, from the next saca, this will carry a Jerez appellation and be called Fino, with 15% natural alcohol. The 2024 La Escribana has to be the finest vintage to date for this unfortified white from Macharnudo from grapes picked at full maturity. It fermented at low temperature in stainless steel vats and matured with lees in used Sherry butts for 12 months. It has a very strong Macharnudo character, a full-throttle expression of esparto grass, brine and the soils and a seamless palate with marked salinity that makes you salivate. It comes in at 13.5% alcohol with 5.63 grams of acidity. For them, this represents the flavor of Bodegas Luis Pérez. 22,000 bottles produced. It was bottled in September 2025.
