Billecart-Salmon Brut NVPale gold. Fresh peach, pear and nectarine on the nose, with a complicating note of white flowers. Fleshy, plush and ripe, with strong peach and ripe pear flavors in a more powerful and less restrained style than last year's release. JAMES SUCKLINGPerfectly pure, brilliant salmon-pink colour; the bouquet beautifully harmonious with freshness and character: dried flower petals, echoes of dried red fruits, and just a hint of lightly browned toast. The wine is soft and almost fluffy on the palate, silken smooth, a lovely glass of rosé, its controlled sweetness leaving a dry finish. Great drinkability. HUON HOOKEA pretty strawberries-and-cream nose that leads straight to raspberries galore in the mouth. Blood orange, too, with a suggestion of tamarind chutney. Frankly fruity and frankly delicious. The balance is just right for food – in fact the wine was surprisingly good with a rich, slow-cooked pheasant red-wine casserole, and equally good with roasted tomato-and-courgette frittata the following day. TAMLYN CURRYRefined, fine-tuned nose of apricot and flower intertwined with a lovely yeasty-toasty undertone. Lightweight, silky palate with bright, pure fruitiness and a smooth cushiony mousse. Billecart-Salmon Sous Bois Brut NVAttractive and complex nose of salted almonds, apricots, figs, raspberries and white chocolate. Tangy green apples, too. Fine bubbles here, with vibrant acidity and sleek, integrated layers. Dry and rich yet all in balance. Equal parts chardonnay, pinot noir and meunier, with about 30% reserve wines. Billecart-Salmon Nicolas Francois 2012This exceptional cuvée, created in 1964 in tribute to the House’s founder, is the result of a blend of the best terroirs from the Montagne de Reims (Pinot Noir) and the Côte des Blancs vineyards (Chardonnay). Its vinification, partly in traditional oak casks, underpins the generous character of this fine, elegant and rich wine.
The balance of a tension, eveloped by the wine’s fullness (honeyed biscuits and lemon pulp), and symbolised by noble and pastry flavours (pear clafoutis, Bourbon vanilla, and lime leaf). A texture with a strong personality, with its limestone imprint and an incredible intensity, curbed by its fully integrated low dosage.
