Champagne
The chalky soils of Champagne combined with its frigid growing environment create wines that are electric and salivating. But it’s the creation of bubbles that makes these wines stand out.
The bubbles are formed during a secondary fermentation in bottle, known as Méthode Traditionelle. The longer they age, the more nougat and brioche flavours develop and the finer the bead (bubble) becomes.
In terms of who invented Champagne, the English make a strong case as they worked out the formula for purposely making the fizz happen and their stronger coal-fired glass bottles - resulting from the Industrial Revolution - could hold the pressure. Whereas the French were still bottling in wood-fired glass which wasn’t strong enough and they hadn’t cracked the technique of creating bubbles on purpose.

Styles
Nowhere in the world can emulate the fineness and electric detail of these wines. Non-vintage Champagnes should be enjoyed earlier in their lives, while vintage wines have more structure and can age beautifully. House styles differ too. Blanc des Blancs (100% Chardonnay) offer a more elegant and fragile expression while Blanc des Noirs (100% Pinot and or Meunier) are darker fruited with more obvious structure and power.

A step up in quality and intensity, but also a bity more tightly wound than the Village wine. Also, more awash with minerality, bordering on estuarine (a character I love with these wines), and that really brings the Chabliness to the fore. Seguinot Bordet Chablis VV 2023OUSTANDING. TOP VALUE. Based on the nose, this could be from nowhere else but Chablis with its quinine, petrol, oyster shell, lemongrass and algae scents that are trimmed in just enough wood to merit mentioning. The rich, sleek and solidly concentrated medium weight flavors possess excellent intensity as well as an abundance of sappy dry extract that buffers the firm acid spine supporting the clean, dry and youthfully austere finale where a touch of rusticity eventually appears. The 23 is built on ease of operation. Slightly more forward than the 2022 with a solid push of fruit, plenty of citrus zest, green apple and edging on some more ripe, seemingly juicy characters that expand out nicely. Punchy acidity freshens things up and the all too important salty twang, that we expect from Chantemerle, makes itself known throughout. Like all of Boudin's wines the balance is what will carry it in the cellar, if required, but for me this is right in the zone for more early drinking. Typically excellent. ROSCOE

William Fevre Chablis 2022FIVE STARS - To bottle in November. The average age is 40 year old vines, and 10% in wood. Excellent long finish. Sources are Chablis and Chichée for half and the rest in Viviers, 50 year old vines. Well drained steep slope which though south facing is at altitude and stays fresh. A fresh lemon yellow. The nose is a little more subdued than the Petit Chablis but more classical. This too has the attractive saline bitterness of extreme youth, but the fruit builds beautifully on the palate. TOP VALUE - There is slightly better Chablis typicity present on the aromas of mineral reduction, iodine and cool white fleshed fruit. Easily the best Ratafia I have ever tasted. Yes, the sample size is not large but it comes as no surprise knowing Vilmart's track record of making fine wines. Ratafia de Champenois AKA Champagne's vin de liqueur.
100% chardonnay from premier cru sites in village Rilly-la-Montagne of Montagne de Reims. Fermentation is stopped before completion by adding young grape spirit resulting in a sweet, full-flavoured wine that is delicate and oh so elegant. A must have for the festive season alongside Nan's pavlova or a stinky wash rind cheese. (serve chilled)

Lilbert Fils Extra BrutSTAFF PICKS 2024 - ALEX WILCOX
The Prince Wine Store team uncovered the Lilbert on a recent trip to France and we were very lucky to be given a small allocation for Australia. This tiny producer (3.5 hectare) is a great addition to our Champagne portfolio. For me this is what champagne is all about - pure fine and elegant with an underlying power - this is truly an anywhere, anytime great bottle of Champagne. If you haven't tried it, you really should.
Bertrand Lilbert's crafts his wines from 100% Chardonnay grown in the Northern part of the Cote du Blanc, the NV is a blend of 50% reserve wine and 50% from 2016 for this most recent bottling. As small grower Champagne prices continue to skyrocket this cuvee is great value for money and will stand up against many bigger name Blanc du Blanc. Elsewhere, these wines have a cult like following, something we hope to help build here. This will be a feature of my Christmas Day in Tamworth. ALEX WILCOX
Lilbert-Fils is a small, slightly under-the-radar grower in Cramant with a loyal following, and it's easy to see why. With 50% of the blend for the first wine of the house coming from a perpetual reserve of Cramant Chardonnay started in the 1990s by Bertrand Lilbert's father, this is an entry level that is anything but simple and youthful. The style is rather floral, with apricot and jasmine notes floating over a real hit of savour from the reserve and a bone dry, mineral presence. Louis Michel Chablis Premier Cru Butteaux Vielles Vignes 2022WORTH A SPECIAL SEARCH - Less impact than Sechets but more perfumed and floral. Ooh! That's got so much volume that I question how it can also be so incisive. Pure but concentrated - the fluidity of this meaning you hardly note the generosity of the wine. Slowly fading - actually quite a discreet finish vs the rest of the wine - but no less persistent than the wines around it I think. That will be a great one too. BILL NANSON
OUTSTANDING - This is similar to the regular cuvée except that it seems ever-so-slightly riper. By contrast, there is better concentration and power to the medium-bodied flavors and, somewhat unusually, the mouthfeel is finer as well, particularly on the more complex if also more austere finale. The 2022 Chablis Butteaux Vieilles Vignes 1er Cru comes from vines around 70 years old, only slightly older than the regular cuvée, but on different soils (white clay rather than brown with high fossil content). It is usually bottled slightly later. The nose is a little more expressive with hints of red cherries and peach skin - very well defined. The palate is well-balanced with more harmony than the regular cuvée, a crisp line of acidity and touches of oyster shell on the saline finish. Great persistence here. Excellent. NEAL MARTIN

OUTSTANDING - A restrained if vaguely exotic nose grudgingly offers up its aromas of white peach, citrus confit, lychee and quinine. There is fine intensity to the equally well-detailed and even more mineral-driven middleweight flavors that exhibit very good persistence on the balanced and nicely dry finale. This highly refreshing, though presently somewhat linear, effort could use better depth so again, a few years of keeping should prove beneficial. BURGHOUND
The 2022 Chablis Séchets 1er Cru has a lovely bouquet with orange blossom plus touches of beeswax that gains intensity with aeration. The palate is well-balanced, with a lightly spiced entry and fine depth. It is quite saline in the mouth, with a slice of sour lemon lending tension towards the finish. Extra wide - panoramic - the mineral stature of the last, perhaps faintly more incisive. It's a wine I'd wait longer to open - maybe 3 years to start with - but it's also a great wine. BILL NANSON
OUTSTANDING - A more elegant, airier and more floral-suffused nose combines notes of spiced pear and enough Chablis elements to be more than just interesting. The refined, delicious and caressing, if not quite as concentrated, middle weight flavors possess very good punch on the firm, balanced, moderately dry bitter lemon-inflected finish. This markedly stony, linear and chiseled effort is also quite good and worth considering. BURGHOUND
The 2022 Chablis Montée de Tonnerre 1er Cru has an attractive bouquet with touches of frangipane infusing the citrus fruit and hints of dried orange peel coming through with time. The palate is well-balanced with a waxy-textured opening. Good delineation, quite saline, with a twist of sour lemon dovetailing into a slight nutty/smoky note on the finish. The 2020 Chablis Vent d'Ange has a light bouquet with lemon verbena, and citrus peel touches, just slightly smudged at first but gaining clarity with aeration. Creamy, ample and layered, it is a fabulous introduction to these wines. Lemon confit, mint, apricot and sweet floral notes are all laced together in a Chablis of total nuance and class. The 2018 Chablis Vent d'Ange AOC was the only Thomas Pico bottling that I could include in this report -but what a great Chablis AOC it is, possible the best you will find! Displaying wonderful focus and precision on the nose, this is intense and mineral-driven. Captivating! Eleni et Edouard Vocoret Chablis Le Bas de Chapelot 2022The 2022 Chablis Le Bas de Chapelot underwent partial tressage in the vineyard this year, so the Vocorets could compare. They found the fruit ripened earlier with more intense aromas. These will be bottled separately. It has a lovely peachy, nectarine-tinged bouquet that blossoms in the glass. The palate is well-balanced with touches of grapefruit and white peach. It is very elegant and pure, with a touch of spice towards the finish. Simply a mouthwatering prospect - difficult to believe this is not a Premier Cru. NEAL MARTIN
TOP VALUE - This also displays an ample amount of mineral reduction on the aromas of brine, algae and white orchard fruit. There is even better density to the sappy and palate soaking medium-bodied flavors that also flash focused power on the stony, moderately austere and beautifully persistent finale.
