Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.

The first impression is as invigorating as a sea breeze. I love the interplay of mirabelle, grapefruit and lychee fruit with minty freshness and waxiness from lees contact. And all this is welded to a beautifully proportioned palate with plenty of structure, the acidity bright and the mousse animating. Very salty finish that pulls you back for more. A cuvee of 41% chardonnay, 33% pinot noir and 26% pinot meunier. Of these, 15% fermented in oak and 85% in stainless steel. A pale silver/straw hue, the NV Champagne Collection 244 has 2019 as its base, with 42% Chardonnay, 26% Meunier, and the rest Pinot Noir. Expressive on opening, it's fresh with a beautiful floral perfume and reveals pure notes of red berries, cherry, fresh peach, and a lovely fresh bit of primary fruit. It has a fine and refined mousse, and the palate is supple and inviting. Medium-bodied and elegant, with a ripe core, it has a delicate salinity to balance its freshness and has an attractive, lightly tannic feel while retaining a refined and precise profile. Algueira Mencia Ribeira Sacra Risco 2019Merenzao is the same variety as Trousseau (and Bastardo in Portugal) and was probably brought to Ribeira Sacra by the Cistercian monks who set up camp here in the Middle Ages. Algueira’s Merenzao vines have an average age of 80 years and are rooted in a steep slope of gneiss, quartz and slate in the Amandi Gorge. The fruit sees a wild yeast, 100% whole-bunch ferment, is pressed by foot and aged for 12 months in old oak and some local chestnut vessels.
The result is an extraordinary, unique wine with a complex perfume of finely detailed fruit characters that recalls wild cherry steeped with blood orange, rose and a tincture of wild herb. There’s more colour and muscular density from the solar year, yet it remains super lucid and tender and finishes long, leaving behind a lick of elegant tannin and a perfume of sweet red berries and smoky minerals. This is one tasty Bastardo!

The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.
