Francois Chidaine Vin de France Moelleux (Vouvray) 2018Again this moelleux cuvée has a very gentle residual sugar, with just 25 g/l. Unsurprisingly it feels very pure and fresh on the nose, with a very focused style, with scents of peach leaf and some lightly honeyed orchard fruit. The palate is pure, fresh and bright, mixing a pithy substance of both orchard and citrus fruits, fresh and pure, with a very fine acid backbone. This is quite striking in the finish, where it is long and cleansed with wonderful vibrancy. Very good potential here but it needs time.”

Chidaine does not release a Moelleux from his Vouvray vineyards every year—the balance has to be just so—and so you can be sure that when he does it is worth seeking out. It's drawn from the clay-limestone vineyards (of Le Bouchet, L’Espagnole, L’Homme, La Chatterie et al.) and made in the same fashion as Les Tuffeaux. Perched on the Première Côte just above the town of Vouvray, Clos du Bourg is a monopole and generally regarded as the greatest of the three Huet single vineyards. The domaine has farmed it since 1953 and purchased it in 1963. Clos du Bourg is arguably the greatest vineyard in the region, producing some of the most powerful, thrilling, long-lived white wines in Europe. Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. Pereira D'Oliveiras Madeira Malvazia Sweet Frasqueira 1991For madeira to get the classification frasqueira, they are required to be aged a minimum of 20 years in barrel, and a further 2 in bottle. The variety used for this madeira as well is Malvazia, a white grape, usually used in sweeter styles of Madeira, due to higher acid and create balance in the finished sweet wine. This particular vintage was bottled in 2019 and released in 2021, with a total of 28 years cask aging.
