This sparkling is just the thing to keep on hand for one of those unexpected celebrations. The Brut Etoile is produced much like Champagne, and spends a year of its life aging in the winery's 15 km of underground tunnels which are the remains of an ancient stone quarry. It’s dry and nutty, distinctly saline, fine chalky texture, green olive brine and pistachio, with a tangy, zesty and nutty finish of excellent length. Vallformosa MVSA Brut NVThe 'MVSA' is made from the tradition Cava varieties Macabeo, Xarello and Parellada at the respective ratio's of 35:30:35%, the wine has seen 24 months of lees ageing and bears 9.5 g/l of residual sugar, but has the acidity to clean up the tail; it is a stylish and satisfying wine of great value. It is pale in colour with plenty of bubbles showing aromas of apples and pears, toasty bread and white flowers balancing the right amount of bubbles and acid. There is pure apple on the palate with minerals and lemon sherbet on the finish; it is a very cooling and refreshing summer drink. PWS

Christmas in a glass! Rich and intense with apricot and marmalade characters. This fortified Pedro Ximénez was made from grapes grown in one of the last remaining Pedro plantings in the Barossa Valley. Amazing!
This is a bit of a staff favourite too. A few of us sweet tooths are big fans of this bad boy and this is a very cool interpretation that isn't quite as intense concentrated as its orginators in Spain but is all the better for it. A little lighter on its feet and that's the way we like it.

Daosa Rose 2021A blend of 88/8/4% pinot noir/chardonnay/pinot meunier. A couple of years on lees for added complexity. An unusual brightness, almost zingy, saline and briny, with a lift of white balsamic friskiness and strong red cherry and rosehip tea characters. Good stuff, from the get-go. It's fragrant and pretty, a good deal of energy on the palate with a tartness and pleasing bitterness despite the ascendence of red fruits and sweet spice.
