The idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."

So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

If you’re lucky, and most of us aren’t, there comes a time in your life when it all comes together. I suspect that’s what’s happened with this Blewitt Springs vineyard, planted in the middle of the  Second World War, and the collection of wine people behind MMAD, all of whom have weathered a lot of summers in a lot of places in the pursuit of wine excellence. This wine tastes of a lot of right decisions, and of a lot of time spent in the journey to them. It has texture, balance, flavour and all that, but as my mum would say, ‘any dumb bunny can do that’. More importantly, what this wine has is all the nods and winks. I once wrote, a long time ago, of a moment where union legend David Campese ran straight through a bunch of defenders without breaking stride, or altering course. He did something, something that couldn’t be seen, and made the impossible look effortless. So too here. It has degrees of silk, fruit enough, a spinnaker on the finish, a volume of nuance. If there was such a thing for single vineyard, vintage, Aussie shiraz, this wine would be classified as first growth. (97) CAMPBELL MATTINSON, The Wine Front

One of the large, historical houses of conventional sherry-making, Williams and Humbert nowadays offer a layer of distinct wines within the fluidity of its 'Sherry' styles. Under the young generation leadership of Paola Medina Sheldon, the Williams Coleccion is a series of astonishingly delicate and singular vintage sherries, or añadas: statically aged single-vintage wines, with terroir as important as bodega influences. Paola mainly takes fruit from the 'las Conchas' vineyard within Pago Añina (jerez), and some from old vines in Pago Carrascal (jerez). 

In every respect, Finolis parallels Willy Perez's remarkable statically-aged natural alcohol Fino Caberrubia (from the same Pago), except that it's a half degree of booze short of the regulations. Only 50% free run juice yield from pressing was used, fermenting naturally to 15%. The wine was then aged in old 600L Fino casks with 20% ullage to allow plenty of Flor. Later, at nearly 5 years of age, the wine was bottled en rama (unfiltered), however the DO refused to ratify it as a Fino as the alcoholic degree had diminished, and it's in the market as table wine of Cadiz, not Fino.

The 2020 Saint Joseph Silice comes from a mix of hillside vineyards and is brought up in barrique and demi-muid for 12 months. A fabulous introduction into the wines of this terrific estate, it has a plump, medium to full-bodied, expansive mouthfeel as well as loads of darker fruits, notes of spice box, pepper, and leather, no hard edges, and a great finish. It should drink nicely right out of the gate yet have over a decade or longevity. JEB DUNNUCK

The 2021 Saint Joseph Silice is also beautiful, with a round, supple, layered style that shines in the vintage. Black raspberries, spice box, dried flowers, and hints of violets give way to a medium-bodied, up-front, charming, layered 2021 that certainly stands out in the vintage. JEB DUNNUCK

This is the most renowned pago in Jerez, planted on pure albariza, a white soil high in calcareous microfossils. Equipo Navazos sources the 115 from a bodega that farms their vineyards entirely by hand and without chemical inputs.
My heart stuttered a bit when the glass was set in front of me: rather than the pale-lemon colour I've come to expect in fino, it was a soft apricot, and I worried that it was past its prime. It was not. It smelled fresh and characterful - Could a wine be more Spanish? It smells like the sea, rich, fatty Valencia almonds, orange zest kneaded into yeasty bread dough, a touch of Manzanilla olive brine and a caramelly tang like birch syrup. The NV La Bota de Fino 115 is still 100% from Macharnudo Alto, and they are trying to make a slightly more fluid wine, not like a Fino Amontillado, which was the case with some bottlings coming from the selection of very old soleras. It's slightly different from the previous edition, number 91; this is slightly younger, between seven and eight years of age, but it keeps the same style, just a little more approachable. Bottled a few days ago. From the Machurnado vineyard. They have decreased the average age by a couple of years so it's seven or eight years on average and the wine is more refreshing and not so uncomfortably concentrated. Firmer and nuttier than I Think Manzanilla with real tang and bite. Hint of molten dry treacle. Real grip. Neat and convincing. Not yet open - needs a couple of months. JANCIS ROBINSON MW

Wheatie, course ground grains and a background hint of fresh toast with wildflower honey. That alone had me coming back. But the aromatics are multidimensional, they run through a wild, complex and beautifully constructed spectrum, from perfume to damp stone, hay to honey roasted nuts. Crazy nuance and head spinning detail. There is so much involved here, but it is by no means bombastic. These details are, at times, faint little suggestions that mingle amongst more obvious characters. It takes time in the glass and air to shake loose some of the more reticent attributes. But they are so inviting and alluring. It is worth just sitting on a glass for a while. I poured some aside to keep coming back to over a couple of days.
The subtle, though not shy, nose does not prepare you for the impact on your palate.
It hits with some force, there's a lot of flavour here and it begins on impact. From the moment it touches your mouth it is a crazy dance. Intense, unusually concentrated and powerful for the style. Loaded up with character and brimming with confidence. This is a Sherry of presence and stature, however it does not depart from the things that we all love in Fino. Salty. Oh, so salty. Fresh feeling, it pops with a sense of spring in the mouth but then leans in to autumnal notes as it slowly, so very slowly, fades away. A final twang of salinity and chalky texture on the incredibly long finish, reminds you exactly what you are drinking.
This is both thoroughly and utterly delicious as well as deeply convincing and totally spellbinding. I love it! ROSCOE

Fabulous wine. Powerful, complex and long. Pure plum into meaty spice into forest berries into fragrant herbs. You can taste the fruit, the soil and the wood, but it all presents as one. Made from 100 per cent de-stemmed Shiraz grapes from the highest block on the vineyard, matured in puncheons, 20 per cent new, bottled after 15 months. Very seductive wine, really deep black fruit aromas, and a beautiful seam of dark spices – Langworthy describes them as “baking spices”; more allspice and clove and star anise than pepper – leading on to a rich but medium-bodied shiraz in the mouth. A scintillating nose of mace, clove, blue-fruit persuasions, lilac, pepper-dried salumi, fennel seed and kelp, akin to nori of the sort found at Tokyo's arsenal of exceptional sushi counters. On the slightly richer side of mid-weighted. Yet, the slippery skein of tannin is so immaculately placed that there is neither heat nor an ounce of sloppy, sweet fruit. Everything is compressed into a polished bone of tension and savory refinement. The acidity is saline and lathered with tapenade. More of a syrah from an external perspective. An irrefutably brilliant one. I wish I had more to cellar, given the wine's noble stature. A ringer for refined Cornas, if not an oxymoron. (97) NED GOODWIN, Jamessuckling.com

A sultry aroma of blackberry, Bing cherries and kombu seaweed. Crushed juniper, clove and allspice meet sandalwood, brown mushroom and pinecones. It’s full of forestry and undergrowth with specks of kalamata olive and hawthorn. Sweetness of spice shines through unpinning the black berried fruit and herbal nuances. Extremely compact and weighty. There is a lot of wine here for the dollar and as per usual it shows off its pedigree with class and sophistication. Tannins are suede like and acidity drives the flavours to the finish line which are way off in the distance. Drink now and will cellar for 5 years. A great wine for slow cooked beef tendon or oxtail.
