This Yuzushu is a blend of Yuzu juice with sake. Yuzu is a citrus fruit grown in Japan. Yuzushu is sweet and will show some cloudiness from the yuzu infusion. This is normal, and please make sure the bottle is shaken before serving. It is refreshing to have chilled Yuzushu straight or over ice, or cold spring water. Or you can create any kind of beautiful Yuzu cocktail.

95% Sangiovese and 5% Colorino. Temperature controlled (maximum 26° C) cofermentation in open tanks with selected indigenous yeasts takes place over 20 days. Aged for 12 months, primarily in cement vats with a small proportion in old oak casks. I think you could say that this wine really displays the freshness and brightness of the estate’s northerly site while offering genuine Classico depth an character. Cherry, blueberry and raspberry fruit is prominent on the bouquet, with a touch of floral perfume in the background. Very lively on the palate, the redfruited flavours are well balanced with the silky but persistent and lingering tannin astringency. Very good drinking now, but a little more bottle age will definitely add some extra depth and dimension. Currently one of my favourites in the portfolio

Fontalpino Chianti Colli Senesi 2020100% Sangiovese coming from the Colli Senesi subzone that hugs the southern section of Chianti Classico, as opposed to the two other Colli Senesi subzones: one to the north of Montalcino, and the other to the north of Montepulciano. Both Gioia and Filippo feel this northern section of the Colli Senesi DOCG far outshines the two southern sections as far as depth and intensity of flavour and structure are concerned. This wine is medium to dark in colour, with a fresh bouquet of spicy plums and violets. Dicey Bannockburn Pinot Noir 2021James is the grower, Matt the caretaker and they are the Dicey brothers. They are also neighbours with all the fruit for Dicey is sourced from the family's vineyards in the Bannockburn sub region of Central Otago. All sustainable and all about showing place.
Nice perfumed aromatics with soft violet, ripe dark cherries, anise and dark plum all interspersed with spicy cedar and delicate woodlands notes. That Otago rich dark cherry is on show but this doesn't feel too big or bulky like some others can. A touch of anise, that same dark plum all pile in there giving this plenty of push and depth. Its supple and soft with a lovely flow that carries the palate to a long finish that seems to unfold dark fruits, savoury spice, cedar and foresty notes layer by layer.

Located in the commune of Radda, Piero and his sister, Benedetta, took over the estate from their father in the mid 1980’s and have extensively renovated the vineyards and, more recently, the old property at Bugialla in to a stunning agriturismo. The wines are typically full and rich yet retain beautiful elegance and perfumed fruit. They taste like Chianti should and they are always good, even in lesser years.
The attention to detail in the vineyard verges on fanatical, with biodynamic farming, careful clonal selection, close planted vines, nitrogenous cover crops, extensive canopy management and hand picking to ensure the best possible combination of concentration, acidity and ripe tannins. Wild yeast fermentation, modern winemaking techniques and French oak for maturation complete the process. The resulting wine reflects these labours and is a beautifully balanced and perfumed style of Chianti with floral notes, spice and ripe red cherry and berry fruit, the structured palate rounded by sweet persistent tannin.

Rocca di Montegrossi is located in the heart of Chianti Classico, about seven kilometres from Gaiole. The name comes from the historic fortress that was built during the Longobard period (600-800 AD) by Geremia, ancestor of the Ricasoli–Firidolfi family, and destroyed in 1530. Marco is part of the Ricasoli family that wrote the story of Chianti Classico, creating the formula for the wine we know today at the site of what is now his San Marcellino vineyard.
The estate covers 60 hectares, of which 18 are under vine and 20 with olives trees. The vineyards are situated on gently sloping hills that are calcareous origin, at between 300-450 metres and planting densities range from 3,300 vines per hectare in the old vineyards to 5200-6200 in the new. Pavillon de Chavannes Cote de Brouilly Ambassades 2022The history of Pavillon de Chavannes is deeply intertwined with that of Château Thivin, another esteemed estate in Côte de Brouilly. In 1861, the Jambon-Chanrion family acquired the estate. The pivotal moment came after World War I, when Yvonne Chanrion married Claude Geoffray, heir to Château Thivin. Yvonne brought with her one-third of her family’s prized vineyards and later acquired another third from her sister. While Yvonne and Claude expanded Thivin’s holdings together, they never had children. Upon Yvonne’s passing in 1987, her family’s original vineyard inheritance returned to Paul Jambon of the Jambon-Chanrion family, along with half of the additional lands she and Claude had purchased. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml
Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.
