Pavillon de Chavannes Cote de Brouilly Ambassades 2022The history of Pavillon de Chavannes is deeply intertwined with that of Château Thivin, another esteemed estate in Côte de Brouilly. In 1861, the Jambon-Chanrion family acquired the estate. The pivotal moment came after World War I, when Yvonne Chanrion married Claude Geoffray, heir to Château Thivin. Yvonne brought with her one-third of her family’s prized vineyards and later acquired another third from her sister. While Yvonne and Claude expanded Thivin’s holdings together, they never had children. Upon Yvonne’s passing in 1987, her family’s original vineyard inheritance returned to Paul Jambon of the Jambon-Chanrion family, along with half of the additional lands she and Claude had purchased. Fukuju Junmai 720mlThe name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Daniel Bouland Morgon Corcelette 2022The "regular" bottling of 2022 Corcelette from Monsieur Bouland is another lovely example of this very strong vintage. On the palate the wine is vibrant, full-bodied and deep at the core, with a fine foundation of soil, bright acids, moderate tannins and great focus and grip on the long, complex and beautifully balanced finish. Of all of Daniel's outstanding 2022s, this is certainly the first cuvée I would be reaching for to drink now, as it has a sense of wide open generosity that is not evident with most of his other, more structured wines from this vintage. Gregoire Hoppenot Fleurie Les Moriers 2021Hoppenot farms almost three-hectares of this imposing east-facing terroir overlooking the famous windmill of Moulin-a-Vent. Les Moriers shares a border with Poncié, Les Roches and Les Garants and the vines at the top of the vineyard lie a stone’s throw from the winery.
Vine age varies from 35 to 90 years. Rising from 260 metres on the Moulin-a-Vent border to 340 metres at the top of the slope, this steep hillside contains two mineral rich soil types: the vines at the top of the slope are on very poor soils of shallow granitic sand; then it becomes heavier in the Bas de Moriers with increasing clay concentration over the granite bedrock. Dewazakura Dewa Sansan Junmai Ginjo Sake 720mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture.
