Rochers des Violettes Touche Mitaine 2021The Touche Mitaine parcel features Chenin Blanc vines aged 35 years, planted on clay and flint soils. It was vinified in used oak barrels of 228 litres, with an élevage lasting twelve months. Aromatically this is rich in powdered chalk, with layers of white peach and a fragrant, lifted, minty freshness. The palate matches this style, in a gently composed structure, polished and fresh, with the same minty, white peach substance. It is framed by firm acidity, which I find typifies the vintage. Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

But you'll need patience, these powerhouses need around a decade to start revealing their inherent complexities.
Le Haut Lieu is the original vineyard, purchased by founder Gaston Huet in 1928. It's based on heavy clay and chalk in the topsoil means these wines tend to be the most approachable in youth, though they age beautifully.
The 2022 Le Haut-Lieu Sec is a lithe, reductive style with floral character and talcum powder. Full of phenolic, lip-smacking texture woven through its core, lending a sense of satisfying grunt to this dry yet balanced style. Before Eric Nuccio was Evesham Wood, he was Haden Fig. His journey into winemaking began in Washington D.C., where he developed a passion for Oregon Pinot Noir while working at a respected wine retailer there. After gaining experience in wine distribution and formal education in viticulture and oenology, Nuccio and his wife moved to the Willamette Valley in Oregon. There, he apprenticed under Russ Raney, the founder of Evesham Wood Winery going on to work with him each vintage while eventually starting Haden Fig in 2007.
For his pinot gris Eric aims for a classic Alsace styling. This is achieved through thought the use of barrel fermentation in older, large format French oak. Here he is not aiming to add oak flavours or aromas but seeks out the textual elements through micro-oxygenation from time in barrel and some light lees contact. This is a wonderfully textured wine with spicy fruit and lilting aromatics that packs in the flavour and drives with wonderful energy and freshness. In 2022 the grapes are sourced from the Mahonia property and the recently purchased Torres Bros Vineyard.

Borderies is often the first vineyard to be harvested from slightly raisened fruit. Notes of jasmine, apple pie and crushed rocks on the nose lead into a subtle sweetness without heaviness. On the palate orchard fruits join in, signing off chalky minerality and a stream of quince-like phenolics which bring balance and punctuate the flow of sweetness. Dewazakura Dewa Sansan Junmai Ginjo Sake 720mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture.
