Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.

The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. Pierre Usseglio Chateauneuf du Pape Cuvee de Mon Aieul 2020The 2020 Chateauneuf du Pape Cuvee de Mon Aieul is 100% old-vine Grenache, sourced from three different lieux-dits: Les Serres (galets), La Crau (clay) and La Guigasse (sand). This preliminary blend came across as rather polite and restrained, with attractive raspberry shadings, silky tannins and a more elegant style than exhibited by past vintages. The 2020 Châteauneuf Du Pape Cuvée De Mon Aïeul is also all Grenache but was raised all in demi-muids (I believe all used). Its more ruby/plum color is followed by an incredible bouquet of mulled red and black fruits, sweet Provençal herbs, spice box, and graphite. It's slightly broader and more expansive than the Deux Freres and has a sexy, full-bodied mouthfeel, ripe, polished tannins, and a great finish. This reminds me a little of the 2006, and while it's already brilliant, I have no doubt it will evolve for 15-20 years in cold cellars. JEB DUNNUCK
