Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

Dirupi Valtellina Superiore 2019The Dirupi 2019 Valtellina Superiore is generous and balanced, with a 360-degree approach to the palate underlined by dark fruit, plum jam, bluebells and other mountain wildflowers. Cavallotto Langhe Nebbiolo 2021Dark and earthy to open, new leather and walnuts, wafts of bergamot, spice and dried flowers. It’s full-bodied, deep in flavour, red and black fruits, kind of rustic, but in a pleasing way, not least in the tea and grainy tannin grip department. There’s a cinch of orange peel bitterness, with a long grated nutmeg and slightly rusty tannin finish. Really opens up after some air. Such character. A very serious Lange Neb! The word benchmark gets bandied around a lot, but this is a Nebbiolo that justifies that term from an already hyped vintage. This year’s wine is drawn exclusively from declassified, mostly young-vine fruit from the great Castiglione Falletto Cru of Bricco Boschis. Cropped at yields below 40 hl/ha, the grapes are entirely destemmed, and fermentation is spontaneous. Malolactic conversion was in cement tanks during the spring following harvest. Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis.
