The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Gianfranco Alessandria Barolo San Giovanni DOCG 2019The 2019 Barolo San Giovanni is the more powerful of the estate's two Barolos. It offers up scents of mocha, spice, dark cherry, plum and leather. Louis Michel Chablis Premier Cru Butteaux Vielles Vignes 2022WORTH A SPECIAL SEARCH - Less impact than Sechets but more perfumed and floral. Ooh! That's got so much volume that I question how it can also be so incisive. Pure but concentrated - the fluidity of this meaning you hardly note the generosity of the wine. Slowly fading - actually quite a discreet finish vs the rest of the wine - but no less persistent than the wines around it I think. That will be a great one too. BILL NANSON
OUTSTANDING - This is similar to the regular cuvée except that it seems ever-so-slightly riper. By contrast, there is better concentration and power to the medium-bodied flavors and, somewhat unusually, the mouthfeel is finer as well, particularly on the more complex if also more austere finale. The 2022 Chablis Butteaux Vieilles Vignes 1er Cru comes from vines around 70 years old, only slightly older than the regular cuvée, but on different soils (white clay rather than brown with high fossil content). It is usually bottled slightly later. The nose is a little more expressive with hints of red cherries and peach skin - very well defined. The palate is well-balanced with more harmony than the regular cuvée, a crisp line of acidity and touches of oyster shell on the saline finish. Great persistence here. Excellent. NEAL MARTIN

OUTSTANDING - A restrained if vaguely exotic nose grudgingly offers up its aromas of white peach, citrus confit, lychee and quinine. There is fine intensity to the equally well-detailed and even more mineral-driven middleweight flavors that exhibit very good persistence on the balanced and nicely dry finale. This highly refreshing, though presently somewhat linear, effort could use better depth so again, a few years of keeping should prove beneficial. BURGHOUND
The 2022 Chablis Séchets 1er Cru has a lovely bouquet with orange blossom plus touches of beeswax that gains intensity with aeration. The palate is well-balanced, with a lightly spiced entry and fine depth. It is quite saline in the mouth, with a slice of sour lemon lending tension towards the finish. OUTSTANDING - A more elegant, airier and more floral-suffused nose combines notes of spiced pear and enough Chablis elements to be more than just interesting. The refined, delicious and caressing, if not quite as concentrated, middle weight flavors possess very good punch on the firm, balanced, moderately dry bitter lemon-inflected finish. This markedly stony, linear and chiseled effort is also quite good and worth considering. BURGHOUND
The 2022 Chablis Montée de Tonnerre 1er Cru has an attractive bouquet with touches of frangipane infusing the citrus fruit and hints of dried orange peel coming through with time. The palate is well-balanced with a waxy-textured opening. Good delineation, quite saline, with a twist of sour lemon dovetailing into a slight nutty/smoky note on the finish. Ata Rangi Masters Chardonnay 2021The 2021 Masters Chardonnay is spicy and concentrated on the nose, with lashings of fruit flavor in the mouth. This has a really savory edge to it that sits so gracefully within the fruit. You get salted peach, white tea/dandelion, cracked fennel seeds, a hint of cumin, white pepper, curls of saffron and loads of crushed shells. This is sleek and polished—it moves sort of like a spearhead through the air. There is full malolactic conversion here but within a tighter frame, and it is a kaleidoscopic, balanced experience. Even more restrained than the 2020, this is very young, showing tightly wound fruit framed by carefully judged oak and a flinty reductive edge. Patrick Sullivan Ada River Chardonnay 2024Medium-full yellow colour with a smoky struck-flint aroma overlying lemon/citrus fruit, a touch of oak spice, all in balance. Nectarine, cumquat jelly and rosewater, ginger and cinnamon, hazelnut, chamomile and mint, and while I’ve likely written some outlandish stuff here, in essence, it pretty much just smells and tastes like a very good Chardonnay. It has plenty of flavour, though it’s not heavy, hazelnut and salted pistachio, a subtle cultured butter character, a chalky and stony thing to texture, acidity is cool and fine, green mango and ripe lemon closes out a finish of excellent length. Eleni et Edouard Vocoret Chablis Le Bas de Chapelot 2022The 2022 Chablis Le Bas de Chapelot underwent partial tressage in the vineyard this year, so the Vocorets could compare. They found the fruit ripened earlier with more intense aromas. These will be bottled separately. It has a lovely peachy, nectarine-tinged bouquet that blossoms in the glass. The palate is well-balanced with touches of grapefruit and white peach. It is very elegant and pure, with a touch of spice towards the finish. Veglio's 2019 Barolo Castelletto is redolent of spice, menthol, licorice, sage and lavender. Incisive Monforte tannins and bright acids give the Castelletto its shape and a good bit of overall drive as well. I would cellar this for a few years and see what happens. ANTONIO GALLONI

Lustrous and just mid ruby. Closed and brooding on the nose, with a hint of black pepper. Gorgeous and fresh on the palate but very backward and just hinting at red currant and raspberry. The 2019 Barolo Gattera is a powerful, broad wine. Even in the new style favored by Veglio today, the Gattera shows its natural breath along with a decidedly dark expression of La Morra. Sweet black cherry, plum, spice, new leather, licorice and mocha all meld together effortlessly. The Gattera offers lovely upfront appeal married to the classicism of the year. Exhibiting aromas of pear, hazelnuts, white flowers, freshly baked bread and orange oil, it's a medium to full-bodied, chalky and incisive wine with lively acids and a saline finish. Mauro Veglio Barolo Castelletto 2020The 2020 Barolo Castelletto is one of the most closed wines in this range from Veglio. Then again, we are in Monforte. Veins of saline-infused dark fruit, crushed rocks, herbs, mint and coffee open with a bit of coaxing. Nervy, focused tannins wrap it all together in style. The 2020 Barolo Gattera is a dark, at times somber, La Morra Barolo. Black cherry, plum, lavender, licorice, dried herbs and mocha all meld together.
