Tasting a nip reveals a boozy heat, turns up the intensity of these two main botanicals and reveals a pleasant peppery finish. It's surprisingly subtle in a G&T due to its well-muddled flavours, and if you like a slow-burning lingering spicy finish, you'll like this gin. Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.

The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Really delivers as you might expect from this excellent concentrated and powerfully frame vintage in Margaret River. It’s dominant cabernet with smaller portions of merlot, cabernet franc and malbec. Typical of this wine since switching to biodynamics, it is bright and brilliant with a nervy tense energy to drive the palate. The succulent fruit is harness by fine chalky tannins and neatly played oak of which 55% was new. A wine of extraordinary elegance and poise with a few of many decades. (98) RAY JORDAN
Needless to say, Margaret River enjoyed another superb vintage with the 2022 season. Slightly cooler, Cullen report that it was a vintage of “immense perfume and texture”. The wine is a wonderfully vibrant purple in colour. The nose gives up plums, cassis, spices including nutmeg, chocolate, mocha, bay leaves, cigar box notes – think a freshly opened box of Cohiba Siglo VI – and near perfect oak integration. This is finely balanced and exhibiting immense length on a palate that sees the emergence of aniseed, mulberries and coffee beans. An alluringly supple texture with the silkiest of tannins, though plenty of them – there really is some grip here. This will easily sail through fifteen to twenty years in a good cellar. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. In addition to this month's Italian Mixed dozen we thought we would like to offer a Negroni pack featuring this incredible product. We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Their philosophy is to maintain tradition through the production while sourcing aromats and herbs from all over the world and based on the local wines of the Piemonte's hills. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.
