Bodega Barrero Gabriela Manzanilla 375mlI love Manzanilla, and I often drink it when I’m out and about… Salty, nutty, chamomile, sourdough bread before it hits the oven, a light honey and mint thing too, lemon zest and green olives. It’s dry and nutty, distinctly saline, fine chalky texture, green olive brine and pistachio, with a tangy, zesty and nutty finish of excellent length. It’s fresh and sharp, (as it should be), but also a little wild, and gee, it’s a very good expression of Manzanilla. The crunch on the finish seals it. Yes. Dandelion Vineyards Legacy of the Barossa XO Pedro XiminezZar Brooks can't decide whether it's ximenez (front label) or ximinez (back label). From a solera started in 1944, now an average age of 30 years. It has a strong, dark roasted nut bouquet, and an extremely luscious brandy snap, cumquat, nut and tea palate. Made from 30 year old material this Pedro Ximinez is produced in an amontillado style. Dry with
hints of walnut and pecan nuts, tea leaf and crème brulee. Christmas in a glass! Rich and intense with apricot and marmalade characters. This fortified Pedro Ximénez was made from grapes grown in one of the last remaining Pedro plantings in the Barossa Valley. Amazing!
This is a bit of a staff favourite too. A few of us sweet tooths are big fans of this bad boy and this is a very cool interpretation that isn't quite as intense concentrated as its orginators in Spain but is all the better for it. A little lighter on its feet and that's the way we like it.

Henriques Madira Bual 10yr OldThe non-vintage 10-Year-Old Bual has a Baume of 3.1 degrees. It has a light, slightly muffled nose. The fruit is initially subdued, although with encouragement, it offers dried lemon peel, a touch of caramel and sesame. The palate is medium-bodied with a honeyed entry and sufficient spice to offset the sweetness. Henriques & Henriques Madeira Sercial 10yo 500mLSercial is the driest style of Madeira and this 10-year-old has vibrant acidity. A rich tawny colour with aromas of fruit cake, nuts, dried orange peel and citrus freshness. An initial figgy richness on the palate gives way to notes of fresh citrus, toasted almonds, walnuts and savoury umami notes. Finishes crisp and dry with a delicious salty tang. Pereira D'Oliveiras Tinta Negra Medium Dry 5yoMixed dried fruits and nuts in a soft nose, all gooey and golden. There are dates and jar plums with fine old treacle from a tin can, a flourish of billy tea, and touches of aromatic timber and baking spice. Has a nicely defined palate with fruit extract and developing abstract secondaries providing a drying rail and grooving the palate. Succulence is nicely controlled – the sweetness only makes it halfway through the palate before the acid train takes over ... but by then the mouth-feel is up and about and sugar has done its trick.
