The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. Tanqueray No.10 750mlPresented in a handsome green fluted bottle, this version of Tanqueray is clean and crisp with a nose poised between coriander and juniper. Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.

The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. Coutet 2020The 2020 Château Coutet is flat-out gorgeous, with a concentrated, powerful style in its caramelized orange, honeyed flowers, pineapple upside down cake, and toasty, spicy nuances. A signature Coutet nose with burnt orange, caramelised peaches and floral flecks. Thick and intense, really lovely weight on the palate, deep yet juicy with high acidity that gives a tang to the palate. Lovely layers of sweetness, acidity and richness - concentrated and intense. The 2020 Coutet has a pale lemon-gold color, waltzing out of the glass with energetic notes of lemon tart, pink grapefruit, green mango and lime blossoms, with hints of chopped almonds, clover honey, candle wax and straw, plus a waft of sea spray. The palate is all class, featuring ethereal intensity and amazing poise, enveloped in a satiny texture and seamless acidity, finishing long and mineral laced. The Coutet 2009 is a sensational effort from Philippe Baly and his team. It has a fragrant nose of honey, vervain tea, pineapple, frangipane and apple-blossom, well defined if needing a little more vigour at the moment. The palate is vibrant on the entry, informed by touches of apricot and orange peel, very focused and tensile towards the long, sensuous, viscous finish. After a scorching summer, the 1990 de Fargues harvest began early (on September 18) and the fruit was picked over 4 tries until October 10 – the earliest harvest on record. It is the most powerful of the trilogy. Delivering 130 grams-per-liter residual sugar at 13.6% alcohol, it has a prodigious bouquet of over-ripe oranges, toffee apple, chlorophyll and even a faint hint of chocolate. Australian glass artist and printmaker, Brian Hirst creates some of the most visual and tactile wine decanters. This bowling ball G+B decanter was a collaboration between friends Giorgio de Maria (leading Italian importer) and artist Brian Hirst (hence the name G+B). A former sommelier, Giorgio helped design a decater that moulds into your hand, making it a pleasure to use.
