Lifted primary aromas of raspberry, dark cherry, licorice, dark jubes, fruit leather, tamarillo, Tabasco, violets, musk and stewed plum. Background notes of dried roses, dried herbs, earth, cedar, tar, cinnamon, olive tapenade, mushroom, toasty oak, fresh baked fruit bread and some charry, toasty oak.
The wine is medium to full bodied, with generous red and black fruit flavours, consisting of blackberry, raspberry, boysenberry, strawberry, musk, plum, cherry, fruit leather, star anise and cinnamon. Dockyard Gin 500mlWe were first introduced to the distillery by Melbourne (and San Sebastian) bar owner, Gerald Diffey. He was fairly passionate about this range of gins he'd seen on a trip back to the UK and urged us to import some. We knew Gerald knew his stuff so we were interested but wary given the number of Gins in the market, but once we delved deeper into the operation and then tasted the range we were sold.
The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. Martin Miller Gin 700mlOn the market since 1999 this spirit is hailed as a pioneer in the current wave of high-end gins. It was the first to use cucumber as a botanical, and the distiller's obsessive attention to detail is given as the reason for shipping the spirit to Iceland for bottling with local spring water before importing the finished gin in to the UK. Many people who say they don't really like gin do like this one, the major difference with a more traditional London dry being beefed-up angelica and orris root notes with hints of violets, and a spicy finish carried home by nutmeg and cassia bark. Floral on the nose, with juniper following. An interesting and modern gin, particularly good in cocktails.

As always, this estate crafted one of the most perfumed and complex rosé wines in France. The 2023 Bandol Rose exhales aromas of spring flowers, guava, lemon, spices and iodine mingled with delicate licorice hints. Medium-bodied, textural and layered, it’s perfectly balanced with a fleshy core of fruit and bright acids, concluding with a long, mineral and iodine-inflected finish. Kudos! YOHAN CASTAINGWonderfully perfumed, the 2023 Rosé entices with orange oil, nectarines, crushed wild berries and savory herbs. Rich and broad yet with a stimulating core of acidity, this plays a game of contrasts on the palate, mixing citrus-laced green melon with zesty spice and crisp mineral tones. A cascade of rosy inner florals fills the senses, as a resonance of white peach and a zest of lime keep the mouth salivating. Glorious today yet also gently tannic, the 2023 is a showstopper. Spring Bay Tasmanian Gin (700ml)The botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of the copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. For me this is an altogether gentle and delicate gin not that it doesn't have presence or flavour. More that it relies on its quality through craftmanship and quality ingredients. Juniper driven but highlighted with native bush botanicals that give a unique flavour and aromatic profile. I often find (Australia) native botanicals in gins overpower everything else but these are judiciously used and create a wonderful tasting gin. Patient Wolf Premium Dry Gin (700ml)If you haven’t noticed the explosion in the craft gin scene in Australia then you must be living under a rock. As a Gin fanatic that has been pretty exciting for me in the last few years watching this category re-energised. Matt and Dave from Patient wolf are one of the newest kids on the block and they have done a fantastic job with their super locally crafted Patient Wolf gin. Yes - I know its not wine!
With the help of their 230L Muller copper still, custom built in Germany they have made what is one of my favorite Aussie Gins to date - and there are a lot of them! Grapefruity-Citrus opens on the nose that breaks and revels a lovely savoury, earthy bent to this gin that I absolutely love. Orris root and peppry corriander compliment the underlying juniper drive. There is an almost forest floor like edge to the pithy citrus flecked core that just works brilliantly and sets it apart from so many Gins that are making their way on to the scene.
Perfect Gin and tonic gin with a slice of ruby grapefruit or try it as a Gin buck with lime, mint and dry ginger. Yum!

Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.
