Cognac Tesseron Composition 700mlComposition is this producer’s first non-XO release, yet even here Tesseron have aimed to make something very special for its level. It pours a bright, light amber colour and offers aromatics of spiced autumn fruit, white flowers and fresh plum, while on the palate there is that classic Tesseron texture and vinous, fruity complexity—ensuring this Cognac’s sipping credentials. Important to note that there is no added colour, it is the older material in this blend that brings the hue and depth. At the bar, we have found the spirit mixes beautifully, adding finesse and lift to a wide range of stirred and shaken drinks. Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. The result has been an incredible selection of complex and aromatic off-dry wines, reflecting the reputation Antoine Gerbelle bestowed on the domaine as “the Romanee Conti of the South-West France”.What makes these wines so sought after is the combination of three unique aspects. First, its location. With only 1.85 hectares Clos Joliette sits at 300m altitude, on the slopes of the hill of Beauvallon (Commune of Jurancon). Cognac Tesseron Lot 53 XO PerfectionThis is a blend of Grande Champagne Cognac distilled in the 1950s. 'This comes from some of our best lots and some of our best blends. This is very much the origin of our range, and for some difference, only about 4% colombard' says Melanie Tesseron. Burnt umber colour. Warm, hearty, earthy, woody aromas with lifted spice, hints of caramel, pepper and high tones of fresh honeycomb and citrus rind. Almost unctuous texture here, a sweetness in the warmth, mellow and succulent, oak sits through the wine but this is much more supple and softened with honey and burnt, charry flavours -lots of depth here, sits smooth and medium-weighted in the palate with ease of drinking at the forefront.
