Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.
And we're very pleased to announce that our Navy Strength Gin has been twice been awarded Master status at the Global Gin Masters (in 2015 and 2016), and Gold at the Hong Kong International Wine and Spirit Competition 2014. fourpillarsgin.com.au

The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Possibly the most masculine Fonseca I've ever encountered, it coats the taster's palate with licorice, jammy black fruits, and notes of chocolate that last for over a minute. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. This is a heady and perfumed gin that is at once powerful and refined. A truly unique product that speaks of its home in the hills and of the philosophy of this family run operation.
In addition to this month's Italian Mixed dozen we thought we would like to offer a Negroni pack featuring this incredible product. We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Their philosophy is to maintain tradition through the production while sourcing aromats and herbs from all over the world and based on the local wines of the Piemonte's hills. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.
