Cocchi's is widely regarded as the original Aperitivo Americano, and has been made continuously since 1891 using only natural ingredients. To aromatise the white wine a secret blend of herbs and spices, to name a few, gentian, cinchona and bitter orange peels, are added to the wine base which is then steeped over a period of time.
In recent years Cocchi Americano has become a cult product in the circle of best sommelier and bartenders of the world. The complexity of this product is the first thing that surprises you. On the nose you initially detect notes of orange zest, orange flower and elderflower before more mature aromas of baked apple and pear drops emerge. Your palate will immediately appreciate the bitter/sweet balance as more bitter notes mingle with honey and citrus flavors, mainly orange and lemon zest. More wine-like characteristics become evident as the flavors develop into a long, vibrant finish, with the bitter and sweet notes remaining fresh until the end.

Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. Quinta do Noval Nacional Vintage Port 2011This is the first time Noval have declared their famous Nacional since 2003 so this is an exciting development. Very dark purple stains the inside of the glass. Gosh, a massive bruiser of a wine. There is such concentration here that not much aroma can escape initially. Wild, peppery stuff. Then wonderfully juicy and spicy. This is like the ultimate biodynamic wine with lots of microbiology going on, in a good way. Very clean and fresh on the finish. Not notably sweet and with more marked acidity than some. A big contrast to, for example, Fonseca 2011. This is all about subtle topnotes rather than broad lusciousness. So vital! The 2011 Quinta do Noval Nacional has an entrancing bouquet that unfolds with time.
