Four Pillars Navy Strength Gin 700mlAfter experimenting with some exclusive batches of a high-proof gin for the Gin Palace we decided to add fresh 'Judy's Everbearing’ native finger limes, alongside our beautiful organic oranges, for its first release in 2014. This fresh citrus goes into the botanical basket, with some fresh ginger, giving our Navy Strength Gin its signature power and intensity.
The finger limes highlight the Asian spices like coriander and star anise, and are complemented by the fresh ginger. Then the turmeric adds a fresh but earthy quality, not unlike dill, and weight to the palate.
The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense - sweet and juicy - but it is still very clean.
And we're very pleased to announce that our Navy Strength Gin has been twice been awarded Master status at the Global Gin Masters (in 2015 and 2016), and Gold at the Hong Kong International Wine and Spirit Competition 2014. fourpillarsgin.com.au

The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Possibly the most masculine Fonseca I've ever encountered, it coats the taster's palate with licorice, jammy black fruits, and notes of chocolate that last for over a minute. Quinta do Noval Nacional Vintage Port 2011This is the first time Noval have declared their famous Nacional since 2003 so this is an exciting development. Very dark purple stains the inside of the glass. Gosh, a massive bruiser of a wine. There is such concentration here that not much aroma can escape initially. Wild, peppery stuff. Then wonderfully juicy and spicy. This is like the ultimate biodynamic wine with lots of microbiology going on, in a good way. Very clean and fresh on the finish. Not notably sweet and with more marked acidity than some. A big contrast to, for example, Fonseca 2011. This is all about subtle topnotes rather than broad lusciousness. So vital! The 2011 Quinta do Noval Nacional has an entrancing bouquet that unfolds with time. It is extraordinarily concentrated with black currant pastilles, baked earth, a touch of terracotta and bay leaf that gains more dimension with time.
