80% Nerelllo Mascalese & 20% Nerello Cappucio from Contrada Moganazzi on the Northern slope of ETNA.
Red berry, Mediterranean scrub and wildflower aromas form the alluring nose on this Nerello Mascalese and Nerello Cappuccio blend. On the bright, savory palate, tangy acidity accompanies juicy red cherry, blood orange and star anise before a saline close.
Whole Clusters are Soft crushed. The old Etnean "pista e mutta" technique is applied: the must is separated from the skins after a very short maceration. Fermented on indigenous yeasts in s/steel tanks. Ageing: S/steel tanks 12 months, min 6 months in bottle before release. Bottled unfined and only lightly filtered.
