The general details? The winemaker, Yoshi, has worked at Felton Rd for many years, in the winery, while his wife Kyoko Sato (who he met on the job) ran Felton's vineyards. A formidable duo who took their lessons learned at Felton, and elsewhere, with them and set up Sato in 2009, purchasing their own vineyard in 2016.
Strict biodynamic principles are adhered to in all things. New wood is minimal. Whole bunches are added judiciously and depending on the season. A much longer elevage than is typical in many estates, which helps form up those beautiful tannins I previously mentioned, as well as shape and coerce the fruit in to adding dimension, mid palate weight and a gently sweet creaminess which I find utterly compelling in these wines.
