STAFF PICKS 2025 - MYLES THOMSON

I remember trying the range from Saison for the first tin and falling in love instantly. Beautifully crafted, understated yet unique flavour profiles and nuance that really impressed. We can barely keep them on the shelf these days and it's no wonder why. Plus it seems vermouth as a category is going nuts right now. This one is made with fresh and wood roasted quinces, caramelized quince sugar, saffron, blood orange, bay leaf and Australian wormwood for bittering.

Strawberries, rose water and delicate Turkish delight aromas are coupled with citrus fruits, baked quince of course with some caramelized sugar notes around the edges. There is a lovely bitter liquorice note just lurking in that background too that anchors the more lifted aromas beautifully. It's a lovely crunchy entry on the palate that hits with rose petal, citrus and a dusting of sweet spice too. Light on its feet and vibrant, yet tons of flavour. Refreshing sweetness and a delicate bittering finish that keeps it all tight and compact. So good!

Lots of options of here for cocktails and spritz variations but honestly, a glass of ice, 60ml of this and a dash of soda (or light tonic), slice of orange and you are set for a stellar aperitif. Feel like this would work equally well in summer or with cooler weather. MYLES
