    Half of the grapes are late-harvested at the end of October with more or less consistent development of the Noble Rot; the other half is left to dry on the vine. Spontaneous fermentation of the must in French oak barrels and subsequent maturation in the same barrels for at least 20 months. Additional 24 months of ageing in bottle.     Released after 6 years in bottle, and you can totally understand, when you drink this, why this is a wise move. This is gloriously toasty: yellow flowers (there's a buttercup vibe through the finish), hinoki, Golden Delicious apples, preserved lemons, yellow peach, pulverised quartz, saline acidity and a creamy undercurrent of crushed nuts.     So vibrant for it’s age, this has great concentration of candied-lime and grapefruit-zest character. Terrific structure and energy on the driving palate, but all of this is wrapped in rich citrus fruit to create stunningly complete harmony.     Pale colour. Classic developed lime, toasty aromas and flavours with hints of oilskin and sage. The palate is superbly balanced and in clockwork condition with attractive fruit complexity, underlying minerally notes, fine lacy textures, very good mid-palate viscosity and fine linear fresh acidity. A touch al-dente at the finish. A beautiful example of Eden Valley Riesling showing the fidelity of vineyard site and masterful winemaking. ANDREW CAILLARD

    FIVE STARS - The fruit of old vines (1955) with little bunches, vinified and matured in stainless steel for a later bottling. This has benefitted from its longer elevage. This plot often delivers a slightly smoky character and I can see threads of this drifting in and out of the white fruit. He finds the style quite different, richer fruit but also smoky. I like this and the energy at the back is very good. It can become reduced so he needs to keep well aerated JASPER MORRIS MW

    The 2015 Chablis Fourchaume 1er Cru has a tightly wound, rather floral bouquet with yellow flower scents infiltrating the citrus fruit and green apple scents. The palate is crisp and fresh with bitter lemon on the entry, with satisfying weight in the mouth. It has a lively, quite spicy and rich finish that leaves a dab of lemongrass on the aftertaste.     The 2015 Chablis Fourchaume 1er Cru has a buttoned-down bouquet: granite and flint, a touch of apricot blossom and lemon curd loitering in the background. This takes you directly to Chablis and nowhere else. The palate is very well balanced with a crisp line of acidity, just the right amount of malic, green apple edginess combined with lemon zest to lend this Fourchaume tension from start to finish, with a dab of spice on the aftertaste. I enjoyed this Fourchaume when I tasted it blind last year and again twelve months later. It might be even better next time! WINE ADVOCATE

    Delicate nose of green pea and lime. Medium-bodied but intense on the palate, with fine acidity and a marked linear character showing great clarity of fruit. Mineral and tangy on the long, citric finish. DECANTER - drink 2018 - 2026

    A funky field blend of co-fermented riesling, gewürztraminer and kerner from the Fechner vineyard.
    Light straw in the glass with heady aromas of citrus, peach skin and poached pear along with hints of Turkish delight, mineral salts, pressed wildflowers, clotted cream and almond paste. Über-slinky and textural on the palate with citrus and yellow plum fruits expanding then contracting with a tight flex of nervy acidity propelling long, perfumed and savoury on the exit.     Sourced from two terraces and predominantly rooting in a rocky subsoil of paragneiss, Hiedler's 2021 Ried Gaisberg 1ÖTW Riesling is dense and spicy on the nose, showing ripe and concentrated bright fruit with subtle earthy notes. Round and elegant on the palate, with juicy richness, well-integrated mineral acidity and persistent ripe fruit flavors on the salty, grippy finish, this is still a young Gaisberg but with promising potential. 13% stated alcohol.     Anyone who thinks that dry riesling is always lean and austere should dive into this deep pool of ripe peach and apricot to discover the grape's sensual side. Generous and creamy, but without any sense of weight, this combines ripeness with zesty freshness at the bright finish. Drink or hold. STUART PIGOTT

    Gaisberg is often spectral, as if its flavors were placed in your hands by a ghost dressed as a bride. Part of that is present here, but there's also a quantum concentration of mineral, catapulted upward by a slingshot of acidity. The wine is so amazing it borders on the implausible.

    The grip and the mere impact on the physical palate are impossible to resist. Yet there a higher octave of flavor that wisps up into the air like the vapors from frozen nitrogen. It's a concatenation of lemons and freesia; it alludes to basmati; it alludes, hauntingly, to white peaches and to blueberries, part of an incipience of sweetness that turns it from prose into music.

    It's introverted but passionate, classical but not stodgy, and it is in every way wonderful. It almost isn't "Riesling" any more. It's just Gaisberg; I know it from Gobelsburg and Hirsch, and this site is quite particular, spectral and subtle; it whispers its strange tongue and you feel an opiate tingle - What is this wine doing to me? It smells a little like Champagne, this cool high chiming, this cryptic bliss. It is a very rare wine, that delivers as many poignant questions as this one does. TERRY THEISE
